Muffins:

3/4 cup sugar
3/4 cup brown sugar
1/2 cup vegetable oil
1 cup buttermilk (or milk + 1 tablespoon vinegar)
1 egg
1 teaspoon vanilla extract
2 3/4 cups flour
1 teaspoon baking soda
3 cups diced rhubarb
Topping:

1/2 cup sugar
1/2 teaspoon cinnamon
1 tablespoon butter, softened
Directions:

Preheat Oven:

Preheat oven to 350°F (175°C) and line 24 muffin cups with liners.
Prepare Batter:

In a large bowl, stir together sugar, brown sugar, oil, buttermilk, egg, and vanilla.
Add flour and baking soda, stirring until just combined.
Fold in diced rhubarb.
Make Topping:

2 Steaks (10 ounce strip steaks)

Steak Seasoning (Kinder’s Prime Steak Seasoning recommended)
4 TBSP butter
1 tsp minced garlic
1 tsp dried parsley

Directions:

Prepare the potatoes: Wash and cut the potatoes into small cubes. Toss them in olive oil, salt, pepper, garlic powder, paprika, and dried parsley.
Cook the potatoes: Place the seasoned potatoes in the air fryer at 400°F for about 20 minutes, shaking them a couple of times during cooking.
Prepare the steak: While the potatoes are cooking, cut the steaks into 1-inch cubes. Coat the steak bites in olive oil, then season with salt, pepper, garlic powder, and steak seasoning.
Cook the steak bites: Once the potatoes are done, set them aside. Cook the steak bites in the air fryer at 400°F for about 7 minutes for medium doneness.
