Across our oyster hatcheries, nurseries, and farms, science is at the heart of everything we do. Growing oysters is a discipline rooted in research, precision, and care.
It starts in the hatchery, where we carefully select broodstock and condition them to spawn. Tiny larvae are nurtured in controlled tanks, feeding on microalgae until they’re ready to settle and form their first shells. From there, our young oysters move to the nursery, where they learn to thrive in flowing seawater and natural light. This is a crucial stage that strengthens their shells and resilience.
Finally, they’re transferred to our farms, where they grow in the clean, cold waters that give each oyster its distinctive flavor and character. Oysters give back to the waters they grow in by filtering and cleaning the surrounding ecosystem, helping to keep our coastlines healthy and thriving.
It takes several years for oysters to grow to the size that you enjoy on your plate. Every step along the way — from monitoring water chemistry, to measuring growth rates, to flipping cages on the farm — reflects our belief that good science grows better oysters and healthier oceans. When nature and human knowledge work together, the result is something extraordinary.
