Have you ever wondered what makes a soft-shell crab "soft"? Soft-shell crabs aren't a different species—they're crabs that have recently shed their hard outer shell through a process called molting.

As a crab grows, it outgrows its shell and sheds it, revealing a new, soft shell underneath. For a short period of time after molting, the entire crab is soft enough to eat whole—including the shell! This brief stage is when soft-shell crabs are harvested.
