This is our thick cut pork porterhouse chop, taken from the rear of the loin. Each chop includes the loin along with a portion of the tenderloin, which is what gives this cut its name and it’s balance of tenderness and flavor. This is a substantial chop, one that feels like dinner.

Our pigs are raised on pasture with room to move and behave like pigs. And that generous fat cap on the chop is left for a reason. Properly raised pork fat renders beautifully in the oven and it delivers as much flavor as the pork itself.

We're proud to raise Suffolk and Dorset sheep on pasture for as long as possible during the late fall season, until the snow arrives. During the winter months, the sheep are fed hay and alfalfa from the barn. It's a reassuring cycle that ultimately leads to the arrival of new lambs in January and February.
