Recently, an organization needed a brisket to smoke for a retirement party and we had an eight pound brisket on hand. They also wanted an English Roast. We were sent some of the meat after it had been smoked and was ready for the party. Like all our meat it was tender and tasted so good through the smoking process.

Amanda has several eight pound briskets in her freezer, so now is the time to stock up. She doesn't always have brisket on hand because of the demand.
