Ever wonder what a small-batch hot sauce production day actually looks like? 🌶️🔥

Yesterday was a LONG one, but a good one.

Lots of weighing, chopping, measuring, blending, simmering, pH testing, sanitizing, bottling…and what felt like an endless amount of washing dishes. 😂

But by the end of the night, all four sauces had made it through production:

🌿 Green Ember
🍊 Citrus Sunburst
🔥 Fire Fusion
🌋 Inferno

One thing I’m really enjoying about doing this in small batches is getting to actually learn each sauce — how it cooks, how the peppers behave, where the heat lands, how the flavors change, and what little adjustments make the finished sauce better.

Today is the less glamorous part: labels, seals, inventory, sorting orders and packaging everything for pickup and delivery.

It’s a lot more work than just throwing some peppers in a blender…but seeing those bottles finished makes it worth it.

I love picking peppers at night for two reasons!

1️⃣ It’s cooler! OMG, Memphis is HOT in the summer! 🥵

2️⃣ With my headlamp, I can see what—if any—pests are bothering my plants. 🔦🌱

This evening, I didn’t find any pests—just the annoying gnats flying around my headlamp!

Unfortunately, I did find one struggling banana pepper plant. Mr. Banana needs some help, so he’s going to get it! 🍌🌶️

The good news? I still hauled in nearly THREE POUNDS of fresh peppers tonight! 🔥

🌱 WHEN WILL THEY BE READY?

These aren’t coming off an assembly line. The organic peppers going into these sauces are growing right here in my backyard, so the garden gets a vote in the schedule. 😂🌶️

I’ll keep everyone updated here on the page as the peppers grow and the harvest comes in. I expect to begin filling pre-orders next month, with sauces being made and bottled in small batches as enough peppers become available.

Orders that need to be shipped will be packed and shipped after their batch is finished.
