FIELD AND MAIN!
As a little date out for LIz's birthday we went to Field and Main. I have known and worked with Neal Wavra for a long time--even back to his days at The Ashby Inn. And we have worked with Neal and Field and Main since they opened, but, incredibly, this was our first time dining there! (Liz and I don't get out much--but maybe that will change some as our older kids can now babysit!)
I got the shrimp (being a meat farmer--seafood is a special treat for me!) and Liz got the beef filet. We also got the cinnamon ice cream for dessert. And the staff was very generous with us and brought us some tasty little tea before the meal, and an un-ordered appetizer of some our chicken with a delicious chicken liver pate garnish! I love chicken liver pate, but I had never had it as a sauce of sorts with chicken--very delicious.
Also, Neal and Chef Joffre very kindly came over and chatted with us in their busy night. And Crystal, our server, and all the staff were very impressive in their warm and attentive service. I was really impressed. Neal and team are doing a great job. We are lucky to have such an excellent restaurant in our county.
Liz and I had a delightful night out: delicious food, a cozy setting, great service, and time for Liz and me to talk uninterrupted!

BEEF JERKY AND SNACK STICKS BACK IN STOCK! NEW FLAVORS!
Thank you for your patience as we have been out of stock for a while here--our processor was backed up.

And now we have new flavors! Beef mild, hot, sweet, and "Sweetheat" (our new favorite!). And also Pork Hot and Mild.

The beef is from our 100% grass-fed beef, with no antibiotics or chemical wormers! The pork is from our pasture-raised, non-GMO fed, no antibiotic, no chemical wormer pork! And the sticks do not have any MSG, nitrates or chemical preservatives!

It is hard to find healthy, low-carb/sugar, shelf-stable snack foods from well-raised animals. Here are some!

Snack sticks are 1oz. 1ct for $2.50, 10ct for $23, 30ct for $63.
Or 4oz bags of snack stick bites--$8 each.
The Jerky is in 4oz packs. $10 each. FYI, it took 12.6 ounces of beef to make the 4 ounces of jerky--there is a lot of food and nutrition in that pack!

LOOK AT THE COOL THING ISAAC MADE!
Thank you to Isaac for making our cattle work easier!

We move our cattle every day to fresh grass. This is good for the cattle (fresh food and clean ground) and good for the pasture (not over grazed nor over fertilized, and the grasses have recovery time to grow more grass and put more atmospheric carbon in the soil!).

But it is work and takes time setting up and tearing down electric fencing every day. So little things like this will help us be quicker and do neater work.

WHOLE TURKEY SALE!
We have a very limited number of whole turkeys available, but I want to move them out of the freezer as we are significantly re-organizing our freezer (also big shout out to Melanie McGurk on that one!)

Normally $5.95/lb, they are now on sale for $4.50/lb! We have turkeys that range from about 20-26 lbs.

FYI, we get some of our most glowing feedback on our turkeys. I think it is because of how we keep them on fresh pasture, and how the turkeys love to gobble up the grasses!

Although it is a lot of meat at once, keep in mind how this is one of our most cost effective offerings--i.e. less expensive per pound than our whole chickens, sausage, or ground beef!

And this is a great time to be making bone broth with the leftover carcass! Make broth, boost your immune, and warm the home while you are at it!

KNUCKLEHEAD KNUCKLE SALE!
Not sure if you were "affectionately" called a "knucklehead" as much as I was as a kid. I can't see the word "knuckle" without hearing the chummy/ribbing line "What are you knuckleheads doing?"

Well, this is a "Knucklehead Knuckle Sale"! Many of our pet people love these. Each pack has 1 part of a beef knuckle, around 2-3 lbs each. Rich in marrow. Great for pets and your bone broth. Usually $3.50/lb. Now on deep sale at $2.00/lb. We just have too many in the freezer. Hopefully your broth pot and your pet will enjoy!

TIPS FOR THOSE ON A BUDGET!
Last week I saw some discussion about how to eat well-raised meat and eggs on a budget. As a father of 8, with our farm as our only income I understand being on a budget. Here are five strategies from our experience as a family, and from my knowledge of the ins and outs of our business.

Strategy #1 is to target less processed products. You will save money the more planning and work you are willing to do in the kitchen. In other words, convenience costs you. A classic example is whole chickens cost a lot less per pound than breasts.

Strategy #2 is to target what is less popular. For example, if you are going to buy chicken parts, go for the drums or wings over the breasts. There is nothing more inherently valuable about breasts over wings, it is just that they are more popular. So if we the farmers don't want to have a freezer full of wings we have to charge more for breasts and less for wings. But you can outsmart the system and go for what is less popular. Besides, wings are better than breasts, just saying...

Strategy #4 is buy a chest freezer and buy in bulk. Strategy #5 is maybe look at your family budget and see if you can make some sacrifices in some other categories to increase your grocery category. For the sake of this conversation, let's lay aside taste and the ethical considerations of the treatment of land, animals, farmers, and farm communities. To simply focus on personal long-term health, I would propose that what we invest in what we put down our throats three times every day holds the lion's share of impact on our health. And besides the health of our souls, what is more important than the health of our bodies?

2023 GOALS MEETING! WHAT DO YOU WANT FROM WHIFFLETREE IN 2023?

Today we had a great team meeting reflecting on what went well in 2022, what went poorly in 2022, and where we can make improvements in 2023! And now we are working on our individual and team goals.

It is not easy to be reminded of our (my) failures, but in some ways it is really exciting to honestly face those failures head on, and with my team by my side begin to work on how we can do better. I am am grateful to be working on all this with this team and with your ongoing support that allows us to do our work.

Some things that are on our list that might be interesting for you:
--More community events--like farm tours, festivals, dinners, etc.
--Improved Thanksgiving turkey buying and picking up plan all around.
--Improved overall experience for our Neighborhood Delivery customers with more opportunities to connect with us and the farm.

What would be some things you would want us to put on our 2023 goals?

DENIM AND PEARLS FATHER/DAUGHTER DATE!
Last Friday, Chef Woody of Denim & Pearls was able to squeeze in my daughter and me for a dinner date. It was a delayed celebration of her confirmation.
We had a really nice evening--the food and drinks and dessert were delicious, the setting and service great, and my daughter and I had a really nice time of undistracted conversation!

We are selling about 800 of our pasture-raised laying hens for pick up June 1st, 2nd, and 3rd. They are on sale now at https://whiffletreefarmva.com/hens-sale. We sell 2 flocks each year and sell out every time so please buy yours sooner than later. Thanks!

In June they will be 18 months old, and will lay well till they are about 36 months old.
Pick up is June 1, 2, and 3rd in the evening when the hens are sleeping--so less stressful on them and easier for you to grab your birds.
They are red s*x link hens.
They have full beaks.
Raised on fresh pasture, non-GMO feed, no antibiotics, and no chemicals on the land!
Depending on how many you buy they are $8 to $12 each.
Sorry, we do not ship, and you will have to pick up from a farm we rent that is very near Whiffletree at those dates and times.

We also sell Sunrise Farm's wonderful Non-GMO, no chemicals, no spray feeds--this is the feed we have been using for 13 years! This is superior to what you can get from a retail store for being a non-GMO/non-chemical feed, but also because we get weekly deliveries of freshly ground feed. Normal retailed feed was ground a long time ago which begins the oxidation process, thereby deteriorating the nutritional quality. To combat this, the feed companies will add preservatives, which also isn't something that is great.

If you are going to go to the trouble of keeping your own hens, it makes sense to me to feed them a clean, nutritious, toxic-free feed!

You may purchase these in the Farm Store Monday -Friday, 11-5pm and Saturdays 10-5pm.

DEEP SIRLOIN STRIP SALE!
We have sirloin strip we need to move!
100% grass-fed, no antibiotics, no chemical wormers!
This is one of my go-to steaks. It is very flavorful, and tender--though not as tender as say a filet or NY strip--though also, not as expensive as those steaks!
Normally $18/lb., now on sale for $12/lb.! Woh!
Most sirloin strips we have are in the .75-1.5lb range.

Also, looking for an awesome, no fuss steak recipe for cooking indoors? See the photo for Shannon Hayes "Best Cooked Steak, Indoors." That is all I use. Salt, pepper, crushed garlic. Sear in good fat in cast iron. Finish internal cook at low temp in oven. Very tasty!

CARMEN, WHOLESALE MANAGER!

Many of you know and love our awesome Carmen Ashwell. Carmen started out as an intern back in 2020. As an intern she did the full gamut of animal chores, and since becoming an employee she has led on lots of different tasks at Whiffletree--taking care of the baby chicks, packing orders, processing chickens, helping customers with whole and half animal orders, making deliveries.

Now, I am training her on being the manager for wholesale sales. She will be communicating with our restaurants, butchers, independent grocers, and local distributors. This has been a significant part of my day to day life, which I have enjoyed, but for which I am grateful to be delegating to Carmen. It will really free me up to spend more time in the field with the animals working with my kids. And time to think more carefully about all our processes and plans so that we can work smarter, and do a better job of farming in such a way as to benefit the health of the land, animals, eaters, farmers, and community.
When I told my kids this morning that I was training Carmen on this, they exclaimed "Oh thank you Papa!" because they know what a big part of my life this has been and how much this will free up my time to work with them! I am excited!
Also, I am excited because I think Carmen will be a great fit for this. Firstly, Carmen is a hard worker that takes pride in her work--she just does good work and I can count on her. Secondly, Carmen is very personable, friendly, and funny--everyone likes her. And thirdly, she already does the weekly wholesale deliveries which means that she already has weekly contact with most of our chefs and butchers. They know her and she knows them, and she has a good sense of what their businesses are like and need.

So congratulations to Carmen and thanks to Carmen for stepping up into this new role!

WORK FUNNER NOT HARDER!

Last week Isaac and I were moving the cattle to fresh pasture but the problem was our Gator broke down. And we had to move four 300 gallon and two 150 gallon water troughs over 300 yards to the next spot by foot--which would have been pretty exhausting, pain-staking work.

I had an idea. And so I made this proposal to Isaac. "Do you want to do something the hard and safe way or do you want to do something the hard and adventurous way?"

After a little consideration Isaac chose the hard and adventurous way.

The troughs had to be moved 300 yards but it was 300 yards downstream with a stream right beside us. And as you may remember it rained a lot early last week and the water was up and quick. So we shed as many layers as modesty and temperature allowed, so we'd have dry clothes if we fell in. And weleft our phones on the bank and grabbed big branches as rafting poles and we each got in 300 gallon water troughs and shoved off.

It worked out great. It was fun and absurd and peaceful to be paddling down the stream in December in short sleeves with a stick in a 300 gallon cattle water trough.

We made our virgin voyage with overall success (didn't fall in) and we figured out how to better catch the current and avoid snags and getting clothes-lined.
On the second trip we put a 150 gallon trough inside of a 300 gallon trough and rode the final 4 troughs to their home.
When we were pulling the last troughs from the stream to their destination, Isaac and I reflected that it might not have been faster work, but it was easier, and WAY more fun.

My dream of being Huck Finn and a farmer are all coming together!

COME SEE THE NEW PIGLETS!

You may remember how sometime back I was putting out the call for pig ground for Ben Dillon. Ben is a former Whiffletree intern and is now back as a Whiffletree subcontractor. He will be raising pigs for us on a farm that we are renting in The Plains. But for now, he has the piglets in our Brooder Barn at Whiffletree on deep bedding. They will go out to pasture in March/April.

Please feel welcome to come walk over and check them out when you come to the Farm Store. You are welcome anytime we are open (Mon-Fri 11-5, Sat's 10-5).
You can see the handy map that Ben made for where they are on the farm.

Here are Ben's thoughts about how and why we raise our pigs.

"We have several goals in mind with our pastured/forested pork enterprise: (1) to honor and respect the pigness of the pig (2) manage in a way that is beneficial to the overall ecology (3) provide our family and yours with clean, nutrient-dense, flavorsome, toxic-free food.

It is our mission to provide our pigs as stress-free and normal life that honors the pigness of the pig. That means putting them on pasture or in the woods in the spring, summer, and fall.

During the winter, as the soil and life found in it go dormant til spring, our pigs are comfortable and content on a deep bedding of wood chips and hay. Come by the farm and check them out!

Starting in January, we will be bringing 45-90 dozen eggs to FISH (http://fauquierfish.org/) each week until we have used up that $2200.

Unsurprisingly, the food that most often goes to those in need is the dregs--not very tasty and not healthy. But you can be proud that you are helping to feed those in need with food that has integrity from start to finish. Food that tastes good, not because it is fancy, but because it was raised in line with nature's ways. Food that is healthy, not because it is fancy, but because the animals, land, and plants lived the life they were meant to live.

This is in no way a credit to us at Whiffletree--this is all a credit to you the people who actually donated the food! Cheers to you and your generosity! This is Day 7 of Whole30. It’s after the new year and I like to try to start the year with a cleanse.

Whole30 doesn’t need to be without flavor! This was a soup my partner made using the bone broth from last week. He included beets, turnips, celery, carrots, garlic, parsley, green beans, potatoes, onions and ground beef & chorizo from Whiffletree Farm. It was a festive fun time with delicious food, wine & holiday spirit! 🎄🎅🏻

And the Turkey 🦃 has landed, in our fridge🤣 100% pasture raised from a farm around the corner from us Whiffletree Farm. #23 lbs we will now thaw for 4-5 days. Make and brine for 24hrs. Slow roast on last day.
We are celebrating thanksgiving on the 22nd this year with as much of the family we could scoop up🙏

Go ahead, poke around my fridge, it’s pretty empty for me but still PLENTY to choose from.

I also got a loaf of Miche sourdough organic bread to dry and make the most amazing stuffing/dressing from;) Stay tuned for that!

How amazing is this?? So proud of my county, and of Whiffletree Farm (by the way, I get my meats there for special occasion dinner parties whenever possible, they are the best!!).
Chef Woody is always putting together a menu with something to please everyone! Our Gourmet Burger menu is no different - swipe to see our selection of mouthwatering burgers, including this Whiffletree Farm Burger that is magnificent!

Today, Burgers with Parmesan Fries only $10 - add a local draft beer for only $5.
Wow, three cheers for our partners at The Fauquier County Public Schools Nutrition Program for helping us in our mission to get some amazingly delicious locally grown food to our students! The past two weeks apples from Megan & her family at Thornton River Orchard & Market have been on the menu. They kicked off our celebration of local during VDOE School Nutrition’a Farm to School during the Crunch Heard Around the Commonwealth. We kept cruising with local food into School Nutrition Association’s National School Lunch week! Big thanks to our vendor pals at 4P Foods & Whiffletree Farm for helping us get some super fresh items on our menus! Pictured here is a lunch that was served at both the high school & middle school level- BBQ chicken from farmer Jesse as well as greens & tomatoes sourced through Tom & his team at 4P!
Special thanks to the PATH Foundation for your continued support in helping us ensure that all students have access to locally grown & made foods. We are so fortunate to be able to serve the school system & the community in this capacity & to inspire folks to make choices towards health!
