JOSEPHINE'S TURKEY BREAST!
My 15 year old daughter Josephine is doing a new thing where she is taking on some cooking project on Tuesdays. This last Tuesday she made our family two beautiful turkey breasts! Doesn't that look beautiful!
It was so herbaceous and delicious, and moist! And all the nice juices with the onions and carrots in the bottom of the pan!
And then running over Liz's killer mashed potatoes. A foretaste of the heaven of Thanksgiving.
Well done Josephine!

At the dinner table we then got into a good family debate about what are the true essentials of the Thanksgiving feast. And we got to a pretty solid consensus that you only really, really need to have the trinity of turkey, gravy, and stuffing. Mashed potatoes, cranberry sauce, green bean casserole are all really bonuses, not essentials. Of course there were some dissenters. I still hold cranberry sauce is an essential.

PLEASE RETURN YOUR WHIFFLETREE COOLER BAGS!
Today we were packing our Neighborhood Delivery orders that go out tomorrow, and we realized that we were really low on these cooler bags in which we pack the orders.

If you have any of these ranging about your house/garage/car trunk because you accidentally didn't leave them in the cooler at the Neighborhood Delivery, well then, please bring them back to our next Neighborhood Delivery or by the Farm Store.

For those who are confused about what I am talking about: We have a bunch of monthly Neighborhood Deliveries around DC, MD, and VA. We drop coolers with orders packed in these cooler bags. At pick-up customers are supposed to take their food out of the cooler bag, and leave the empty cooler bags in the cooler. But sometimes people forget about that step.

Also, for our Neighborhood Delivery customers, we recycle any empty dozen-egg cartons--they don't need to be ours. And we recycle plastic bags.

More and more of you have been inquiring about reserving your Thanksgiving turkey so I wanted to make sure everyone knows the plan.

As always, our birds are raised on fresh pasture, non-GMO feed, no antibiotics, no chemicals, and we treat them humanely from beginning to end.

The game changer here is the pasture! That is where the brunt of the work is--managing and moving animals around the pasture is not easy, but it makes all the world of difference for the bird and for the land!

This year we are selling the turkeys and half turkeys in 2-lb. increments to best get you the size you want. We are also offering turkey parts--breasts, leg/thighs, wings, backs, organs, ground turkey, bone-in ground turkey for your pets, etc.

And we are offering our "Thanksgiving Chickens", which are larger chickens that might make a good alternative for smaller gatherings.

SPATCHCOCK CHICKENS ON SALE!
We were working with a chef, and he was loving our spatchcock chickens, but then his situation changed and he left that restaurant, and now we are sitting on a bunch of spatchcocked chickens...(pregnant pause)...that we want you to help clear out of our freezer!

First off, "spatchcock" is a fun word to say, so when you buy our spatchcock chickens be sure to take the opportunity to say "spatchcock chickens" as much as you can.

Secondly, what is a spatchcock chicken? Well, first you start with one of our truly awesome pasture-raised, non-GMO, no antibiotic whole chickens.

Next step, we cut out the back bone. This allows the chicken to be cooked splayed-out like in the photo. You can do this baked in the oven, or on the grill.

One of the virtues of this is that it helps the thighs cook at the same rate as the breasts--so you don't make the mortal sin of overcooking your breast to get your thigh to temp--eww!

The other virtue is that it looks really cool, and kind of like Wile E. Coyote after hitting the canyon floor.

And the third virtue of this is that you are not paying for the weight of the backbone--so more meat for your buck!

Plus, with me putting this on sale--you are really getting a sweet deal here.

Normally $6.75/lb. Now $5.25/lb!

The birds average around 4.5 lbs.

A FEW OF MY FAVORITE THINGS: CHECKING OUT STREAMS AFTER A BIG RAIN!
I took this video after a long day slaughtering and processing turkeys last Saturday (Thanksgiving turkeys go on sale 8am 10/1, BTW!).

Do you remember that crazy storm that blew through Saturday late afternoon? We were under cover but with open sides--rain was blowing in and trees were flopping around like wild dancers.

Well, after we wrapped up the work around 5pm and the storm had blown through, I had a peaceful moment doing one of my favorite things: checking out streams I know after/during heavy rain.

It is so elemental, but there is just something fascinating about seeing the dramatic change and the power of the water. And sometimes the crazy things that have been shifted around, or come sailing down the surging waters.
Can any of you all relate?

I have done this my whole life, from a boy in my parent's house with a little creek. And I can remember a crazy hurricane that came through Charlottesville when I was in college, and my housemate and I went for a run in the downpour and just checked out all the streams we knew. And here I am, 41, and still doing the same thing.
I love water, streams, and seeing what the weather and land do together.

Please "meet" Alisaha Wallo, our newest intern. Alisha's family has a homestead operation near Fredericksburg, and she is hoping to learn a bunch here to bring back to her family's operation.
Alisha has already been a great addition to the team--a great attitude, engaged, and really friendly.
So far her duties have been some of the following:
--Feeding hens, chickens, and turkeys
--Gathering eggs
--Moving hens, chickens, and turkeys to fresh pasture
--Cleaning and packing eggs
--Taking care of the baby chicks
--Prepping our Processing Area for Poultry Processing

Vegetable harvest 👩‍🌾

Howdy!

This hot, dry weather is really taking a toll on all of us, especially the garden! I use drip irrigation on the plants, which is a great way to direct water ( a main line supplies water to smaller “drip tape” water lines, which deliver a slow ➕ steady drip of water to the base of each plant)

However, it seems like there isn’t enough water to go around these days! The drip lines just aren’t enough.

Here is to hoping we get a big storm this weekend ⛈️

Even still, we’ve got plenty of fresh produce available.🎉

MANUEL SALDANA AND HIS RABBITS!
Manuel Saldana joined us for a Team Lunch on Monday to visit and share with the team the details of his meat rabbit operation.
(Check out his rad rabbit print shirt! I'm gonna have to look for some chicken and turkey print shirts now...)

Manuel was a star intern for us back in 2018. From there he and his wife Claire and their family have worked on their beautiful homestead operation here in Fauquier, In Tune Homestead. (Also, regarding the name, check out Claire for your piano tuning needs--she is great!)
If you have ever got a rabbit from us, it was from In Tune Homestead.

Manuel does a great job, and it was fun to learn some more details on rabbits and their care.

Some misc notes:
--Rabbit bones are proportionally small, so for every pound of whole rabbit, you get a lot more meat than you would off a similarly sized chicken, etc.
--Manuel gets about 4 sets of baby rabbits (kits) per year from one doe.
--A good doe will give about 8 kits per litter.
--Manuel harvests from their gardens to supplement the alfalfa pellets the rabbits get.
--Unlike many other animal fertilizer, rabbit p**p is not "hot", and can go straight in the soil for most plants, without having to be composted first.
--Historically, rabbits as a common source of meat was greatly diminished by the advent of industrial chicken production in the mid 20th century.
--Manuel keeps good notes on his rabbits and has been able to see improvement through breeding for rabbits that do well in his context: no antibiotics, foraging from garden (not just pellets), dealing with the seasonal changes, etc.
--Rabbits are a great homesteading operation particularly for how you don't need to purchase any expensive equipment for raising them or processing them.
--Rabbits are better than most poultry for getting their nutrients perennial forages, as opposed to annual crops.

This morning as Carmen and I harvested peppers and tomatoes for a wholesale order, we enjoyed an autumn-like chilly breeze. It was fantastic harvesting weather!

Our vegetables are no-spray, no chemical, no herbicides or pesticides used. Our vegetables are just vegetables! Nothing weird or unnatural.

BLACK TWIG!
A couple weeks back, Chef Dan of Twig and I got together at Black Twig. Dan treated me to a delicious fried chicken (with Whiffletree chicken!) and greens lunch! It was sort of my Hobbit-ish 2nd lunch at 3pm, so I didn't go crazy with all his other delicious-sounding sides. It was a killer lunch. Chef Dan and team are on point. For realsies.

Fried chicken is my weakness. If I were a classical painter, I would portray the Adam and Eve scene with fried chicken thighs hanging off the tree.
The serpent would be whispering in my ear: "I think that chicken was fried in pasture-raised lard..."

I really admire Chef Dan on several points:
--his food is delicious
--he is seriously, seriously committed to using local, regeneratively raised food, to an extent that is really exceptional.
--he seems to be really good at the hard task of leading a team in executing his vision
--he is really kind to me and easy to work with.
--he and I really see eye to eye on music taste and I love hearing his suggestions (think anything from Aaron Copland to Nina Simone).

INTRODUCING BETHANY FISHER!
Bethany Fisher is one of our new interns. She started at the beginning of August and will finish at the beginning of December. Bethany comes from Minnesota.
Though Bethany has only been here several weeks, she has already impressed us all with her calm but focused attentive and intelligent work. She is an excellent communicator, gracious, and very easy to get along with. Just all around great person. We are lucky to have her.

So far her duties generally rotate around to these tasks:
--Feeding hens, chickens, and turkeys
--Gathering eggs
--Moving hens, chickens, and turkeys to fresh pasture
--Packing orders for our Neighborhood Deliveries and Restaurant Deliveries
--Making local restaurant deliveries
--Cleaning and packing eggs
--Taking care of the baby chicks

PASTURE RAISED TURKEY 🌱 🦃

Whole turkey reservations go on sale October 1st at 8 am! Make a note, they go fast 🦃

Our turkeys are LOVING the pasture here on the farm.

Utilizing mobile housing, we move them to fresh pasture daily! They not only have 100% access to the pasture, but the turkeys are constantly in NEW pasture. The grass stays green and the symbiotic relationship of animal to earth is in harmony. Ahh 😊

No standing around at Whiffletree!

Stop by the farmstore, ask for directions and see for you self- these turkeys are happy! They gobble and make greetings when you walk up to the fence to visit.

Raising turkey for the holidays ( or any day! ) takes a lot of planning and work. The farm crew puts in extra labor to raise these special birds. Each one of us thanks you for your support of regenerative agriculture and especially us, as a farm and individuals. 🤍 👨‍🌾

Tomato season is strong and our harvest is abundant! The hot weather has been well received by the heat loving crops (peppers, sunflowers, tomatoes!)

I’ve been busy in the kitchen making tomato dishes ⬇️
pizza sauce (using Kellogg’s breakfast Tomatoes, olive oil, garlic powder, oregano, sea salt, minced onion.)

I made a chunky salsa last week with the Kellogg’s breakfast and jalapeños! I added bell peppers, onions and vinegar. I snacked for days 😋

"FORD-ANTHONY-FORD-ANTHONY-FORD-ANTHONY!"
Yesterday we had a really fun day.

We spent Monday and Tuesday getting ahead on our chores so we could take a break yesterday. And most of the Whiffletree staff and interns and our Poultry Processing Crew hiked White Oak Canyon in the Shenandoah Park.

The hike was great. The waterfalls are beautiful. The swimming holes are fun. But probably the highlight was the rock slide.

Here you can see Ford and Anthony crushing the slide! Ha! So fun!

It was my first time.down the slide, and I was a bit scared, but it was great!

It was excellent to spend a day with all these wonderful people in a beautiful spot having some fun.

Cheers to all the great people we have at Whiffletree. I am grateful.

CRAZY TURKEY SALE TO EMPTY OUT FREEZER!

We are getting ready for a crazy freezer time for us: when we slaughter and process our Thanksgiving turkeys (yes, Thanksgiving is around the corner!), and so we need to make space in our freezer.

We have just put most of our turkey products on a 50% off sale! Yowzers!
Breasts, leg/thighs, wings, and ground turkey are all 50% off!

We don't have the margins for this kind of discount, but we really need to make space in our freezer, so you win! Please help us empty the freezer!

PS, if you are wondering about when the Thanksgiving Turkeys go on sale, it is 8am October 1st. Mark your calendar!

ANTONIA AND JARED: AWESOME INTERNS!
Last week was a sad week for us as we said goodbye to two of our most awesomest interns, Antonia Charbonneau and Jared Kroutil, who finished up their 4 month internship with flying colors.

Antonia came to us from Front Royal, and beyond being a person of integrity and an excellent worker, Antonia is great at making fast friends and sharing laughs and having fun no matter what is going on. Antonia is off to her freshman year of college. We look forward to getting updates and seeing her when she comes home for vacations.

Jared came to us from Minnesota. Jared is a super solid guy. Unflagging upbeat attitude, tough, focused, and at the same time, with a twinkle in his eye and ready to laugh at himself or at whatever is going on. Jared is remarkable for how steady he is. By way of example, once he had discovered Old Rag, he must have hiked that like 5-10 weeks in a row without missing a week. The dude impresses me. Jared is off to visit family for several weeks and then onto a grand road trip around the country visiting the major National Parks. Then back to Minnesota to work on starting his own farm. Jared promises to send us a photo of him wrastling a bear.

We already miss Antonia and Jared, and wish them the best, and look forward to the next time we get to see them!

This is Day 7 of Whole30. It’s after the new year and I like to try to start the year with a cleanse.

Whole30 doesn’t need to be without flavor! This was a soup my partner made using the bone broth from last week. He included beets, turnips, celery, carrots, garlic, parsley, green beans, potatoes, onions and ground beef & chorizo from Whiffletree Farm. Topping this amazing root vegetable soup off with two pasture raised fried eggs makes for an amazing first meal on this windy Saturday morning.

We had the pleasure of serving our four-course Authentic Greek Holiday Wine Dinner this past Saturday!

It was a festive fun time with delicious food, wine & holiday spirit! 🎄🎅🏻

And the Turkey 🦃 has landed, in our fridge🤣 100% pasture raised from a farm around the corner from us Whiffletree Farm. #23 lbs we will now thaw for 4-5 days. Make and brine for 24hrs. Slow roast on last day.
We are celebrating thanksgiving on the 22nd this year with as much of the family we could scoop up🙏

Go ahead, poke around my fridge, it’s pretty empty for me but still PLENTY to choose from.

I also got a loaf of Miche sourdough organic bread to dry and make the most amazing stuffing/dressing from;) Stay tuned for that!

How amazing is this?? So proud of my county, and of Whiffletree Farm (by the way, I get my meats there for special occasion dinner parties whenever possible, they are the best!!).
Chef Woody is always putting together a menu with something to please everyone! Our Gourmet Burger menu is no different - swipe to see our selection of mouthwatering burgers, including this Whiffletree Farm Burger that is magnificent!

Today, Burgers with Parmesan Fries only $10 - add a local draft beer for only $5.
Wow, three cheers for our partners at The Fauquier County Public Schools Nutrition Program for helping us in our mission to get some amazingly delicious locally grown food to our students! The past two weeks apples from Megan & her family at Thornton River Orchard & Market have been on the menu. They kicked off our celebration of local during VDOE School Nutrition’a Farm to School during the Crunch Heard Around the Commonwealth. We kept cruising with local food into School Nutrition Association’s National School Lunch week! Big thanks to our vendor pals at 4P Foods & Whiffletree Farm for helping us get some super fresh items on our menus! Pictured here is a lunch that was served at both the high school & middle school level- BBQ chicken from farmer Jesse as well as greens & tomatoes sourced through Tom & his team at 4P!
