GEORGE WASHINGTON LOVED MANURE!
My father-in-law and mother-in-law took some of the kids to Mt. Vernon yesterday and among other things they learned about how GW loved manure.

He defines a "knowing farmer" as "one who can convert everything he touches into manure, as the first transmutation towards Gold."

Here here to that George!

What he is saying is what all of us pasture-raised animal farmers have been harping on, which is that a balanced ecosystem needs the symbiotic relationship of plants and animals interacting with each other according to their given natures.

Hence, I think it is safe to say GW would not have been a fan of CAFOs (taking animals off the land and putting them on concrete) and not a fan of fake meat (taking animals off the land and growing more corn and soy).

"YEAH, ME TOO, BUDDIE..."
We have a new chore plan with my kids. Each of the older kids has 1-2 days per week where they are helping me with some of the farm chores. We are all really happy about it.

My 12 year old daughter, who helps me move the cattle 1 day per week, drew me this picture of her and me taking down the temporary electric cattle fencing together. I have the reel and she is taking out the step-in posts.

She is not a real effusive girl; what she says she often says matter-of-factly. Which makes this drawing all the sweeter.
And that is exactly how I would answer her.

I got into farming for three main reasons:
1. I thought I could do some good in this work.
2. I enjoy doing physical work outdoors, and enmeshed with living, growing life.
3. I wanted my family and work life to be all smooshed together.

This picture is a so satisfying on point #3.

KAREN'S INCREDIBLE TEAM LUNCH!
Karen Shufflebarger (Karen does our bookkeeping and accounting and ordering from our partner producers) made this awesome team lunch. Sweet potato and bean enchiladas.
This was made with love (and lots of planning and prep). So tasty.

Thinking of meatless meals as Lent approaches.
Keep in mind our wild seafood, eggs, dairy, baked goods.

Liz's mom's family is Greek, so we have watched My Big Fat Greek Wedding more than once. I am thinking of that scene where the mother tries to accommodate the vegetarian by offering to cook lamb. Ha!
We have 100% grass-fed lamb too...

DESCRIPTION
My wife and I started Whiffletree Farm in my hometown of Warrenton, Virginia in 2009 and have been growing the farm and our family since!
We have 8 kids that range from 13 to 1, are Catholic, and love our family, farm, and farm team! The Farm Team generally consists of about 5 full time employees, several part time employees, 1-4 interns, and a stellar poultry processing crew.
We work hard to do our work excellently, quickly, and with joy.
We raise and sell about 15,000 chickens, eggs from about 2400 hens, about 900 turkeys, and around 140 steers per year. We also collaborate with many other excellent farmers and producers to fill out the diet and offerings for our customers! You can see all we offer at www.whiffletreefarmva.com.
Everything is raised on fresh pasture, non-GMO feed, no antibiotics, no chemicals, and our beef is 100% grass-fed.
We sell through our Farm Store, Neighborhood Deliveries that range from Maryland to Central Virginia, and to many restaurants and wholesale customers.
If you have an eager-beaver attitude and are earnest about doing excellent work, we would like you to join us in our internship program!

LOCATION SPECIFICS
We are only three miles south of my beautiful hometown of Warrenton, VA. 50 miles from DC.

POSITION DESCRIPTION
The goal of our internship is that our interns will cheat their learning curve as they move toward starting their own farms, or as a low risk way of checking out the field to see if this is a good career for them.

Our internship is 4 months long. We have 3 sessions that start in April, August, and December respectively.

Interns will work with all of our animals from start to finish. Moving, feeding, watering, processing, packaging. Additionally interns will help with the many other parts of our direct-marketing business: customer service, packing orders, making deliveries, taking animals to slaughter, picking up meat from the slaughterhouse, transporting meat to and from our cold storage, fixing infrastructure, etc.

3 SESSIONS AND START DATES
We have 3 sessions for our 4 month long internship. Those sessions start April 1, August 1, and December 1.

EDUCATION POTENTIAL
What Interns Learn:
FARM-- Interns will become versed in all the pertinent farming practices of raising our animals, with exposure to all the animal work on a daily basis. Meat chickens, laying hens, turkeys, and beef cattle. This includes moving, feeding, watering, equipment, processing, packaging, etc.
MANAGE-- Interns gain exposure to how we operate (business, marketing, customer service, record keeping, sourcing, etc.)
NETWORK-- Because we source from a diverse group of farming friends who are raising what we do not, interns have exposure to many knowledgeable people and farms.

EXPECTATIONS
We work hard as a team, to do our work excellently and with joy... moving, feeding, and watering the animals, cleaning eggs, processing chickens, building and maintaining infrastructure, making deliveries, helping customers in the Farm Store, record keeping, meeting other farmers, and more. Interns come to Whiffletree ready to learn, and leave our farm having cheated ahead on their learning curve to start their own farm!

Who We're Looking For:
Candidates must be 18 years of age and have an excellent attitude and great work ethic. We are looking for a person who is cheerful, tidy, professional, honest, willing to receive constructive criticism and desires to do the work excellently and quickly. No farming experience is required.

COMPENSATION, ROOM, AND BOARD
Free housing and utilities, $800/month stipend, $100/month food credit.
We have 2 team meals per week.

YESTERDAY'S TEAM LUNCH! PORTERHOUSE!
Yesterday was my turn to make our Team Lunch. We had some porterhouse, T-bone, and skirt Steak where the packaging was a little damaged...so it was a feast for us!

Seared in cast iron with tallow, salt and pepper. Then into the oven at 200 degrees to get to 115-130 degrees.

We also had some buttered toast and scrambled eggs to hit all the important food groups. Ha!

BOURBON BAYOU KITCHEN!
Bourbon Bayou Kitchen just recently opened in Ashburn and is headed by Chef Jazz West. Jazz and I have been working together for some 3-4 years and she is an excellent person and chef.

And thank you to her for continuing to use our food in her new exciting gig!

LIZ IS THE BEST COOK SERIES: SIRLOIN STEAK!
This was Wednesday's dinner and it was delicious (and I had missed lunch so it was all the more delicious!)! And yes, I ate all of that!

I still am learning about beef cuts and have a lot more to learn, but only recently did I learn that the bone-in sirloin steak has the top sirloin, which is the larger piece of meat above the bone, plus part of the tenderloin, which is the smaller piece of meat below the bone (mostly covered by my salad in this picture).

Liz and my go-to recipe on steak is Shannon Hayes "Best Cooked Steak, Indoors". I highly recommend it.
The basics are:
Salt, pepper, garlic rub. Sear in cast iron. Finish cooking in oven at 150-200 degrees.

HELP ROBBY FIND HOUSING NEAR WHIFFLETREE?!
Robby Deans is transitioning from an intern to a full time employee at Whiffletree as our Poultry Manager, and he is looking for rental housing near Whiffletree.
Can you please spread the word to see if anyone has something nearby that would work for him?

First off, I give my highest recommendation for Robby's character and kindness. He has total integrity. He is tidy, respectful, and considerate.

Here is what he is looking for:
Ideally he would like something affordable that is within a 15 minute drive of Whiffletree. His preference would be to have his own kitchen and bath, but he is open to a shared kitchen/bath.

He would be looking to move in around April 1.

The event was organized by mastermind & owner/operator of Distinguished Engagements, @Theresa Ruffo-Swanson. Bradie, their beyond talented pastry chef, wowed the crowd with a Basque style cheesecake- the perfect end to an amazing gastronomic tour in our own backyard. Farmers supporting farmers! This photo was one of the best we captured at Market yesterday. It represents our area’s culture of local agriculture. They are two farming families who are focused on not only raising and growing fabulous food, but practicing sustainable habits to be good stewards of the earth so that we may leave the land a little better for the next generation than it might have been for us. On the left, behind the table) is Amanda Day of Starstead Farm. They are an organic veggie farm that joins us during high season at Market. Yesterday, Amanda was selling her hand bound leather journals at our Holiday Market. On the right is the (almost entire) Straight family of Whiffletree Farm. Although they do not currently vend at Market, they are a local farm with a farm store & come to shop at Market as well. They are long time friends of many of our Market family members. This photo captured one of the moments that remind us that supporting local farmers, food makers, & artisans really does take a village! Thank you all for coming out to support them & thankful that they come out to support & encourage eachother. Their jobs aren’t easy, but we are lucky that they enjoy the work- they keep our community nourished in the right way.
