Chocolate Wheat Cake πŸŽ‚

* 1 Β½ cups wheat flour

* ΒΌ cup cocoa powder

* 1 teaspoon Baking soda

* Β½ teaspoon Salt

* 1 cup sugar (organic, or 1.5 cups grated jaggery) I added jaggery

* 1 cup Milk

* 1/3 cup oil (coconut or light olive oil)

* 1 tablespoon Lemon juice (or apple cider vinegar or plain vinegar)

* 1 tablespoon Vanilla extract

* Preheat the oven to 340 F or 170 C for at least 15 mins. οΏ½
* Grease a 8 inch round cake pan & line with a parchment paper. Set aside.

* Mix 1 Β½ cups flour, ΒΌ cup cocoa powder, Β½ tsp salt and 1 tsp baking soda. οΏ½
* Sieve the flour mix at least four times to aerate the flour. This makes the cake light. οΏ½
* Add 1 cup jaggery and mix it well. If you are using coarse one then you can also dissolve it in 1 cup water and pour it in the next step.

* Make a well (space) in the center. Pour 1 cup milk, 1/3 cup oil, 1 tbsp vanilla extract and 1 tbsp lemon juice or vinegar.οΏ½
* Gently begin to mix well from the liquid ingredients in the center. οΏ½
* Mix just until the flour is combined well with the wet ingredients. Do not over mix.οΏ½
* The batter will be runny. Pour it to the cake pan. οΏ½
* Knock it a few times against the kitchen counter to release air bubbles.οΏ½
* Bake for 30 mins. Check after 25 mins. To check if it is completely baked, insert a skewer in the center of the cake and check. It must come out clean.

* Keep the cake pan on a wire rack and allow it to cool down for 8 to 10 mins in the pan.οΏ½
* Invert eggless wheat chocolate cake gently on a wire rack. Allow it to cool completely.

Maati Handi Mutton Kasha (Clay pot Mutton Curry)

Ingredients

Mutton – 1 kg

Sugar – 1 tsp

Bay leaf – 2, Cardamom – 3, Cinnamon – 2, Cloves – 4

Onion – 4 nos, sliced

Garlic paste – 4 tbsp

Ginger paste – 2 tbsp

Tomato – 1 no, chopped

Turmeric powder – 1 tbsp

Chilli powder – 2 tbsp

Yogurt – 2 tbsp

Garam masala powder – 1 tsp (Mace – 1 piece, Cinnamon – 1 inch, Fennel seeds – 2 tsp, Clove – 2 nos, peppercorn – 10 nos, Black cardamom – 2 nos, take the seeds, Cumin seeds – 1 tsp, Coriander seeds – 1 tsp) grind all.

Mustard oil – 4 tbsp

Salt – As required



Method

Heat the Mati Handi for 10 to 15 mins.

Add mustard oil, heat it again, the smoke will come out from the mati handi.

Add sugar, stir it until sugar changes its colour, then add bay leaf, cardamom, cinnamon, clove, Fry all.

The add sliced onion.

After 5 mins add ginger and garlic paste. Mix all the ingredients well, after sometime add chopped tomato. Stir it.

Add turmeric and chilli powder, mix all of them.
Once the oil starts to leave the sides of mati handi, put in the mutton pieces and mix the masalas together.

After 10 mins add yogurt. Mix it. Add salt.

Add 1 cup of warm water.

Cover the lid of the mati handi, cook it in a low flame.

Cook until mutton is done. Mostly it will take 1 1/2 hour but check whether mutton is done or not.

Finally add 1 tsp of garam masala and close the flame.

So your Mati Handi Mutton Kasa is ready.

Serve this with Rice or Roti.

The best thing of Mati Handi is it can be cooked in less oil and it has its own colour and taste. It’s different.

illishi Macha ro Soriso Bata / illish Maacher Shorshe Bata
(Hilsa Fish in Mustard Gravy)

Ingredients

Hilsa/iIlish – 4 pieces (mainly peti piece)

White mustard seeds – 1/2 cup

Green chilli – 4 nos, slit

Turmeric powder – 1 tsp

Black cumin/Kala jeera

Water – 1/2 cup

Mustard oil – 4 tbsp

Salt – As required

Method

Coat fish pieces evenly with salt and turmeric powder.

Heat oil in a pan, slightly fry the fish pieces as you will see illishi fish releases good amount of oil while cooking. So don’t use too much oil.

Add 1/2 cup of water and 2 green chillies to the white mustard seeds and grind it into a smooth paste.

Heat oil in a kadhai, add kala jeera (black cumin) and remaining green chillies. Let the phoron (chaunk) crackle.

Then mix 1/2 tsp of turmeric powder in 1/2 cup of water and add it in the kadhai.

Cook it in low flame.

Now add fish pieces, mustard paste and little water until it forms a thick gravy.

Finally add salt and cover the lid, cook for another 5 mins than close the flame.

In Odia and Bengali household, this delicacy is solely and wholly enjoyed with steamed rice.
