Here’s a sneak peek at our Wednesday morning milk routine!
All of our dairy needs are budgeted/scheduled throughout the week, so that our customers receive the freshest product possible. Wednesday is one of our “butter days”, meaning we separate in the morning and make butter in the afternoon once deliveries are completed.
Today we’re only separating around 7 gallons of milk, with the heavy cream going out for pickup and the skim is being bucketed for our friends at Naturally Green Farm and Flowers over in Corryton, TN where it’s used to feed both their gardens and their flock of American Bresse meat birds.
We love feeding our neighbors AND their gardens!

Do you know what this means??
Our last spring/summer batch of meat birds are on the way!
These little nuggets will hang around the farm until our August processing class (8/2), but in the meantime don’t forget the class on June 20th!
We’ll be breaking down birds into cuts, spatchcocking and flat packing whole roasters, and talking about our favorite ways to get the most out of each harvest.
From bbq chicken to fancy organ meat charcuterie to bone broth to dog treats, nothing needs to be wasted. Don’t miss out!

Its been very soggy and stormy over the last few days BUT tomorrow is still Memorial Day, and if you're like us you're probably still going to find time to light the grill and crack a cold one (beer, kombucha, whatever tickles your fancy) in remembrance of those we've lost.
If you're out and about tomorrow, looking for something tasty and local, come see us at the farm!

And if you've never spatchcocked a chicken for the grill before... go check out our Kelly Farms Moo-shiners Club group for step by step instructions. You won't want to cook a whole chicken any other way!

Having some fun in the kitchen on this dreary day and stocked up on Garlic Bread Butter (with sautéed garlic and shallots) and 4 lbs of fresh ricotta cheese. I’m thinking Italian food for dinner, how about you?
