Indian cuisine reduced to ONE SPICE!!!! Honestly, if this was just about people hating Gene Weingarten’s opinion it would have been fine, or if had expressed it on his own blog for his audience. The Post publishing it was shocking. Now posting an apology doesn't solve the problem of cultural ignorance. You don’t have to love a cuisine or you don’t have to love a spice just because I and more than a billion other people do. All I ask of and their opinion writers like to think before they publish/write disparaging articles in the name of personal opinion. This article not only displayed his ignorance of a culture but also biology and human evolution and history. The “one” spice is the reason the Silk Road was in existence, the East India Company traded with India leading to the British Empire colonizing India. The “one” spice that is exported from India - black pepper, cinnamon, turmeric, cardamom, mustard seeds, cloves, red chilies, cumin, coriander, and fenugreek to name a few. Please take time to educate yourself or use google before you make gross stereotypical generalizations!

Roji’s Royal sajjige or Kesaribath or sooji halwa.
Many South Indians are celebrating Varamahalakshmi pooja today. We don’t traditionally celebrate it as Iyengar’s but I would love for Lakshmi, Goddess of wealth blessings all the time. Fridays are considered the day of Lakshmi and auspicious. Why not make a dessert I very rarely make and please the goddess as well as my family (kids not sure will be as pleased as hubby will be) This is a simple dessert made with variations all over India. My Roji Pati loved to shower her desserts with dry fruits and nuts. She had a rule the dessert had to be opulent and no one should search for a nut, it should be readily available in every bite. Mind you, fruits and nuts are a garnish typically! The main ingredient cream of wheat rava almost becomes optional.
Her recipe - in big dollops of ghee add roasted almond powder, cashews, Golden raisins and 1 cup rava or sooji.
Roast them together until the kitchen starts to smell heavenly. Add 1/2 cup sugar, powdered cardamom and 1 cup milk.
Mix it all in and add more milk to make an even consistency.
Add another dollop of ghee.
Add a generous amount of saffron soaked in milk to the mix.
Add more sugar if desired.
Once the rava starts to cook in the milk - optional add a banana mushed in or pieces of pineapple.
Add another dollop of ghee on top until it’s glistening and it’s ready to serve.

I doctored up a plain vanilla cake mix with Roji’s Chakra chai masala, walnuts, cranberries, freeze dried raspberries and topped it with fig jam and powdered toffee and chocolate wafers. It’s exciting when experiments become a super hit. I promise it tasted as good as it looked! Disclaimer: I am not a baker normally, I deviate from recipes on a whim which using ends up messing up with the baking process!

Desi chicken wrap
Marinate the chicken with Roji’s Spice Market MASALA RUB, oil and yogurt
Refrigerator for a few hours
Laid out the chicken in the airfryer - I used the roast setting at 390 deg
I open and turned the chicken a few times and once it was cooked on all sides I prepped for the sandwich
I added some homemade Desi potato hash - sautéed with onions, tomatoes and jalapeños, yogurt, mint chutney along with the chicken strips on toasted naan

Green Beans palya or seasoned green beans
Fresh Batch of Bangalore Seasoning Mix
1 spoon ghee in a heated pan
Add 1 spoon of the Bangalore seasoning mix and optional dry red chilli
Add the chopped green beans
Garnish with cilantro and optional fresh grated coconut
Voila Green Beans Palya is ready

You can use the Bangalore Seasoning Mix for cabbage, carrots, potatoes etc

Akki Rotti- Pan fried vegetable rice flour pancake - traditional breakfast in Karnataka. This is a family fave! Ingredients- rice flour, cumin seeds, grated ginger, shredded or finely chopped - any variation of onion, colored peppers, carrots, cabbage, peas and green chillies and cilantro. Fresh coconut optional. Mix all the ingredients in a thick batter. Make a ball of the batter in your fist and pat it on foil with 1 spoon of oil. Transfer the patted rotti face down on to a heated cast iron pan. Leave the foil on the pan for a few minutes and peel the foil off the rotti. Add a spoon of oil and flip the rotti. Flip a few more times until both sides are crispy. Remove and serve hot with ghee or butter. Typically eaten with chutney pudi or powder or Indian pickles.
