Smoked salmon!

I hate seafood with every fiber of my soul, but I enjoy cooking it cause of the challenge of the unknown.

I did a 6 hour brine with a bunch of random stuff from my pantry including soy sauce, hot sauce and garlic. After the brine I did a heavy dose of salt and pepper then it went over lump charcoal and pecan wood for about 30ish minutes.

In celebration of my dad's birthday and both of my folks getting their 2nd Covid shots, I made a BBQ platter. I made brisket, chicken wings, kebasa, rib tips, crispy pork belly and beef short ribs. This also what happens when you have random meats in the freezer and need to make some space.

I always wanted to make a BBQ platter, and I'm glad I finally got to do it but after making it, I didn't even much.

Pork belly burnt ends are one of my favorite things on the smoker. Marinated overnight, two-ish hours on the direct smoke, and another hour in a pan coated in BBQ sauce. This is literally meat candy.

So I meant to start this page to share some of my cooks and videos....and never posted.

Here are some ribs I did with Spiceology Honey Adobo as the rub and a honey bourbon BBQ sauce as the glaze. Stay tuned, this should get better.
