Pork Belly Breakfast Biscuit Sandwich 😎

Today’s assignment was BREAKFAST for National Griddle Week. I’d say, I understood the assignment 👊🏻
I seasoned the pork belly with Meat Church BBQ Honey Hog rub and smoked it on the Big Green Egg at 275*. Low and slow!
Once the pork hit a temperature of 192* I sliced it thick and cooked it on the Blackstone Products griddle for several minutes while tossing with Trybachans Japanese BBQ sauce. I warmed a biscuit on the griddle with butter until golden on the cut side. I cooked the scrambled eggs on the griddle as well, over low heat. I added a fire roasted chilis to the eggs for added flavor!
I placed the sliced pork belly on the biscuit and topped with the eggs and fire roasted chilies. I then added pickled banana peppers and a drizzle of hot honey 🍯.
I’m not going to disclose how many of these I just personally crushed 🤦♂️
