We are honored and excited to announce that chef has been selected as an ambassador for .

The hospitality industry gives us purpose, creativity, and community — but it can also take a lot from us. As a Black chef, mental health is a conversation I believe we must continue to normalize and protect — in kitchens, in leadership, and beyond. This industry can be demanding, and too often we’re expected to be resilient without being supported.

Very grateful to support an organization that is actively creating space for real conversations, resources, and change within our industry.

Proud to stand alongside chefs and hospitality professionals who are working to take care of each other — on and off the line. Thankful for the opportunity to advocate, learn, and support others in this space.

Well look what arrived in the mail yesterday 😍

Merry Christmas to me 🥰

What started as an essay in Eater SF about anti-Blackness in fine dining turned into a follow up in a book. This took a lot of vulnerability from me. I guess I can add published author to my resume now 😁

e le aɖe Test Kitchen was created by Chef Selasie Dotse as an elevated, fine dining pop-up concept offering a chef’s table, supper club, and other culinary experiences. We create memorable, unique cultural experiences with an emphasis around African and Black stories throughout the Diaspora, whilst highlighting thought-provoking wines with a story to tell.

At our core, we combine cultural authenticity with creative innovation. Cultural authenticity ensures that we are staying true to the roots and traditions of the cultures we are representing, while creative innovation allows us to present these stories in fresh, engaging, and impactful ways. By doing so, we hope to create a platform that not only shares stories, but also inspires curiosity, sparks dialogue, and fosters a deeper appreciation of the diverse cultures that make up our world.

‘e le aɖe’ - meaning ‘tasty or it appeals to the tongue’ in the Èʋe language - pays homage to Chef Selasie's Èʋe-Ghanaian roots. By embracing their roots and honouring the richness and complexity of different cultures, e le aɖe Test Kitchen seeks to create a platform for cultural exchange and connection with fellow guests, where people can come together to savour the flavours of the world and celebrate the joy of shared experiences.

As I arrive in the Bay Area for some quality time with my bae and friends, I realize I'm returning to where this entrepreneurial roller coaster began. Yesterday, marked 6 years of being in the popup game. e le aɖe Test Kitchen (formerly Sankofa Pop-up) was born.

Sankofa Pop-up represented turning away from the Eurocentric cooking I had been doing for years and embracing the foods I grew up eating. The pandemic of 2020 gave me the time to do more dinners and test out my pop-up concept. After several months of refining my technique and researching my cultural background and cuisine, Sankofa Pop-up evolved into e le aɖe Test Kitchen, a West African dining experience exploring the culinary links between Africa, the American South, Latin and South America, and the global diaspora.

‘e le aɖe’ - meaning ‘tasty or it appeals to the tongue’ in the Èʋe language - pays homage to my Èʋe-Ghanaian roots. By embracing my roots and honoring the richness and complexity of different cultures, e le aɖe Test Kitchen seeks to create a platform for cultural exchange and connection with fellow guests, where people can come together to savor the flavors of the world and celebrate the joy of shared experiences.

Over the years, e le aɖe has evolved from just a pop-up concept to a small business focused on teaching, mentoring and collaborating with other Black chefs throughout the African diaspora.

After finding success in Cali, I now find myself back on the East coast looking to start fresh. I recently participated in a restaurant pitch program, created by and , where I connected and worked with several industry partners who helped me rework my business for the DMV market. The biggest shout-out goes to for helping with the creation of my new logo for my rebrand. Y'all really understood the assignment and came through.

Inibla: An East African Meets West African Inspired Dinner

Tempura black cod. Cucumber. Avocado mousse. Sh*tor. Perilla. Injera tortilla.

This East African street food traditionally consists of fish marinated in coconut milk with lime and berebere, then fried and tossed in spices.

Envisioned as a hot fried fish taco to combine my love of tacos and Nashville hot fried foods.

We marinate the cod in the same traditional marinade of coconut milk, lime and berbère before tempura frying and tossing in more berbère. The fish is then served on an injera tortilla with sesame perilla leaf and finished with fresh cucumber, creamy avocado mousse, sh*tor and cilantro.

Pairing: Mitmita Me There Cocktail. A spin on a vodka sour using tropical fruits and spices from Ethiopia. Available on the beverage menu.
