DC Sake cō’s Deep Dive Series returns for an intimate evening of tasting, conversation, and stories shared directly by the people behind them.

This edition welcomes Kimio Yonezawa, 4th-generation toji of Akashi Sake Brewery, and Miho Komatsu, Head of Brand Advocacy for Hatozaki and Akashi-Tai.

Date: Tuesday, September 15th
Time: 6:30-8:30 PM
Location: “Show of Hands” at The Roost
1401 Pennsylvania Ave SE, Washington, DC 20003

Rooted in Akashi, Hyogo since 1856, the Yonezawa family’s brewing tradition has evolved across generations and today extends into sake, whisky, and gin. As both toji of Akashi Sake Brewery and the master distiller and blender behind Hatozaki whisky, Yonezawa-san offers a rare opportunity to explore these different crafts through the philosophy, traditions, and experiences of the person behind them.

Joining him is Komatsu-san, an SSI-certified Sake Sommelier and WSET Certified Educator who has spent her career sharing Japanese sake and its stories with audiences around the world.

World Sake Day, celebrated every year on Oct. 1, marks the traditional start of the sake brewing season in Japan. More than a calendar milestone, World Sake Day honors the rich history, craft and cultural significance of sake—a drink deeply woven into Japanese rituals, cuisine and daily life.

Summer’s almost over ☀️🔥
Before the last BBQs of the season, upgrade your grill game with sake.

I love trying different types of sake every time we do a BBQ—because each one brings something different to the grill.

This time, we’re pouring Nanbu Bijin All Koji.

Made entirely with koji, it has a rich, mellow sweetness, savory umami, and elegant acidity. That combination makes it a fun match for smoky, charred BBQ flavors.

Smoky grill + sweet, savory sake = a perfect summer pairing. 🔥🍶

Fire up the grill, pour the sake, and enjoy the last days of summer!

(this still works, right? 😄) — wanted to remember this fun Sunday we had at popfizzdc with ToriSumi 鳥炭 Yakitori !

Every year during Otakon season, the thought of getting sake involved somehow comes up… and it never makes it past “it’s happening” 😅 This year, thanks to Brent and Blake — who already run the Sunday Yakitori pop-up every week — we got the invite to join them and bring some sake flights to the crowd. Thanks for connecting us, Allen Bae 🙏

Thank you to everyone who came out and enjoyed sake with us that day! Pouring and talking sake was the least I could do among the amazing Popfizz team — grateful to be part of it 🍶

World Sake Day, celebrated every year on October 1st, which marks the traditional start of the sake brewing season in Japan. Timed with the rice harvest, it’s the perfect moment for breweries to begin production.
Four years ago, Reiko Hirai, a Japanese national and owner of D.C. Sake cō, launched “Kanpai to Sake Day in DC”—the first celebration of its kind in Washington, D.C.—to invite the community to be part of this global sake tradition. Her vision was to create a welcoming space where both sake lovers and the sake-curious could explore an exceptional variety of sake styles, learn directly from expert brewers and sommeliers, and connect with one another in a warm, vibrant atmosphere.
