Food is one of the few remaining ways in which we engage all of our senses and provides a time for connection around the table. Want to embrace local seasonal eating but feel daunted by ingredients, cooking techniques, or a lack of time? Let Taste of Place take the intimidation out of cooking and eating locally. Get to know flavor profiles, pairings, and techniques to help you break out of the recipe box. Personalized Market to Table Cooking Lessons Starting at a local market select farm-fresh ingredients, then learn delicious ways to prepare them in your own kitchen rather than learning in a lab. This includes a quick consultation of your kitchen and how to make the most of what you have. Market Tours Get to know the history of markets and their neighborhoods while touring markets and sampling what’s fresh. Tasting Parties Interactive tastings to showcase what’s fresh at the market and locally-produced culinary delights.

If skate wing is so cheap and plentiful and popular, why aren’t we eating more of it?

Skate is delicious and quick to prepare and the perfect excuse for a butter sauce! Dust with cornmeal salt and pepper. Cook in a hot pan with plenty of butter until golden brown on each side. Serve with a squeeze of lemon and a sprinkling of capers. Fresh skate is frequently available at Southern Maryland Seafood Company at Eastern Market.

Confusion about its characteristics and a short shelf life may limit its widespread use.

At first, just one, a glossy purple clot
Among others, red, green, hard as a knot.
You ate that first one and its flesh was sweet
Like thickened wine: summer's blood was in it
Leaving stains upon the tongue and lust for
Picking. Then red ones inked up and that hunger
Sent us out with milk cans, pea tins, jam-pots
Where briars scratched and wet grass bleached our boots ..."
