Growing up in our house, there was always a big salad with every meal -- at the end, like our mom had eaten during her Swiss boarding school days. #1 Mom’s home cooked meals always included plenty of vegetables, as well as traditional Chinese fermented foods.
Our love of vegetables and sour only increased. Yi Wah, the #1 Son of our family, has spent time in every part of the food/hospitality world in DC. One of the chefs he worked with went on a deep dive with fermentation - he was hooked.
Like many origin stories, ours starts over a good bottle of bourbon with some fellow food friends. There were also some cucumbers, spices, salt and water. A few weeks later, Yi Wah came back to the crock of fermenting cucumbers - we were hooked! Our fermented pickles were unlike any we had tasted before: sour, crunchy, dare we say...a bit more complex. Yi Wah kept his bet with his drinking buddies: he bought a tent + setup at a farmers market in Alexandria and started selling pickles. The response we got from folk about our traditionally fermented pickles was amazing. The people wanted more. So Number 1 Sons was born.
Over the years, we’ve added other fermented vegetables and started pickling with Virginia Apple Cider Vinegar, which we source from a family producer that’s been making vinegar for 100+ years.
