INGREDIENTS
Apple Fritter Batter
• 1 cup (120g) sugar-free vanilla or yellow cake mix
• 1/2 cup Fit Flour (or vanilla protein powder)
• 1 tsp baking powder
• 1 1/2 tsp ground cinnamon
• 1/4 tsp ground nutmeg
• 1/4 tsp salt
• 2 large eggs
• 1/2 cup (120g) nonfat Greek yogurt
• 1/4 cup milk, plus more if needed
• 1 tsp vanilla extract
• 1 tbsp fresh lemon juice
• 2 medium apples (250g), peeled and diced
• Avocado or canola oil cooking spray
Optional Glaze
• 1/2 cup powdered sugar or sugar alternative
• 1–2 tsp water
HOW TO MAKE IT
• Peel and finely dice the apples, then toss with lemon juice.
• Mix cake mix, FitFlour, baking powder, cinnamon, nutmeg, and salt.
• In another bowl, whisk eggs, Greek yogurt, milk, and vanilla.
• Combine wet and dry ingredients, then fold in the apples. The batter should be thick and scoopable.
• Preheat air fryer to 325°F.
• Scoop into 6 fritters on lightly greased air-fryer-safe parchment. Flatten slightly and spray with oil.
• Air fry for 5–6 minutes, then carefully flip and spray the other side.
• Continue cooking until the total time reaches 10–12 minutes and the centers are fully cooked.
• Cool for 3–5 minutes.
• Mix powdered sugar with water and drizzle over the fritters if desired.
Tip: Keep the air fryer at 325°F so the centers cook before the outside gets too dark!
