Let’s talk about a pantry staple with deep roots, hominy corn.

Hominy is comfort food at its finest. It is dried field corn that has been soaked and treated through a traditional process called nixtamalization, which removes the hull and unlocks its signature chewy texture and rich, nutty flavor. It is a key ingredient in many Panamanian dishes and beverages, including tamales, tortillas de maiz, bollo, empanadas de maiz, chicheme, and hominy corn porridge.

Happy National Herbs and Spices Day!

When it comes to Panamanian cooking, our primary herb is culantro, not cilantro. Known for its bold aroma and rich flavor, culantro is the heart of many traditional Panamanian dishes. It is the key ingredient in recao verde, a flavorful green seasoning used in favorites like arroz con pollo, tamales, and sancocho, Panama’s traditional soup.

The foundation of many Panamanian recipes is the holy trinity of culantro, onion, and bell peppers. For many Panamanians, the aroma of these ingredients sautéing together instantly brings memories of home and family gatherings.

While often confused with cilantro, culantro is typically cooked into dishes, while cilantro is used fresh as a garnish. Though long popular throughout Panama, the Caribbean, and Latin America, culantro is becoming increasingly available in the United States through ethnic markets and home gardens.
