Blackberry Blueberry Layer Cake
Ingredients:
2 and 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons black sesame seeds
3/4 cup unsalted butter, softened
1 and 3/4 cups granulated sugar
4 large eggs
1 teaspoon vanilla extract
1 cup buttermilk
2 cups fresh blueberries, plus extra for topping
1 cup fresh blackberries, plus extra for topping
1/3 cup granulated sugar, for the berry compote
1 tablespoon lemon juice, for the berry compote
8 ounces cream cheese, softened
1 cup heavy whipping cream
1/2 cup powdered sugar
small white flowers and fresh thyme sprigs for garnish
1 gold spoon for serving
Instructions:
Step 1: Preheat oven to 350 degrees Fahrenheit and grease three 8-inch round cake pans.
Step 2: Whisk flour, baking powder, baking soda, salt, and black sesame seeds together and set aside.
Step 3: Beat butter and sugar together until light and fluffy, about 3 minutes.
Step 4: Add eggs one at a time beating well after each, then stir in vanilla.
Step 5: Alternate adding the flour mixture and buttermilk beginning and ending with flour.
Step 6: Divide the batter evenly among the three pans and bake for 25 to 28 minutes.
Step 7: Cool the layers completely on a wire rack before assembling.
Step 8: Combine blueberries, blackberries, granulated sugar, and lemon juice in a small saucepan over medium heat.
Step 9: Stir and cook for 8 to 10 minutes until the berries break down into a thick glossy compote.
Step 10: Let the compote cool completely before using.
Step 11: Beat cream cheese and powdered sugar together until smooth, then fold in whipped heavy cream.
Step 12: Place the first cake layer on a cream-colored ceramic plate and spread a layer of cream cheese frosting on top.
Step 13: Spoon a generous layer of berry compote over the frosting on the first layer.
Step 14: Add the second cake layer and repeat with frosting and compote.
Step 15: Place the third layer on top and apply a thin rustic coat of frosting to the top only.
Step 16: Spoon a small amount of compote over the top frosting letting it seep into the cake slightly.
Step 17: Top with fresh blueberries, blackberries, small white flowers, and fresh thyme sprigs.
Step 18: Refrigerate for at least 2 hours before slicing and serving.
