We are so happy with our American Breeses and are excited to offer these this summer!
šā„ļøšPeople ask me all the time why did we chose to change to raising White American Bresse dual purpose meat birds over the Cornish Cross.
Here are some facts that we also noticed between both breeds. They both have pros and cons but we absolutely love them for the way the meat is flavorful and marble, that they reproduce, and also that they donāt have health issues from growing way too fast. Also these guys have beautiful huge blue legs to hold up those big ol bodies and we let ours free range with our others when itās not chick season here on the Farm. Our Rooster is a big ol boy and he is the sweetest boy too! Also if you have ever processed a Cornish they smell awful in my opinion, we moved the chicken tractor daily and they still smelled like nasty p**p they layed inš¤¢, I didnāt even want to eat the meat lol. Here are some great facts about the two breeds.
šCornish Cross Chickens can't compete with American Bresse Chickens in rich and succulent flavor or fat marbling, because the extremely early harvest of Cornish Cross reduces the flavor as well as the texture of the meat. This doesn't seem to matter to the market, but I wonder if this is because no one knows what they are missing?
šAmerican Bresse Chickens can't compete with Cornish Cross in speed to market (6 - 8 weeks) for sure, but I doubt you'd want them to, as they'd lose the magic of their flavor and succulence. Am Bresse chickens require a minimum of about 12 weeks to develop the intense poultry flavor and fat marbling for which they are known. A big advantage to raising American Bresse is the sustainability factor - you can hatch and raise your own birds without having to depend on a distant hatchery.
