It's been such a blessing to have both Josh and Cody with me at the Monroe County IL Farmers Market. His Saturday in June is actually this coming weekend, so we get one more market together before a long stretch of me flying solo!

Scallions! Or green onions, bunching onions...whatever you like to call them! Tastes like a mild, sweet onion...sprinkle on top of soups, ramen, salads, baked potatoes, dips and more. Stir fry, cook with eggs, make scallion pancakes, roast whole as a side dish. They are such a versatile veggie, the ways to use them really are endless. We'll have lots of our beautiful, organically grown scallions available at the Monroe County IL Farmers Market this Saturday!
