We sell halves, quarters, and wholes as well as offering individual retail cuts. Halves and 1/4s of beef are a cost effective way to get the greatest variety of meat. Halves are approximately 350-400lbs hanging weight and include processing, custom-cutting(to your specs), and labeled vacuum packaging. Regardless if buying whole, half, quarter, or by individual portions, consumers will rest assured that their beef from Black River Livestock Company will be a...."Cut Above the Rest!"

$3.75 per hang weight on custom side bulk orders, all inclusive which means you get the prime grade beef, processing done to your specifications( our partners take pride in working with you to get how you want cut relative to what it can yield), custom vacuum & labeled packaging , and delivery from our processing partners back to the local area. The rubber meats(bad Cattle humor)the road in terms of savings comes in the form of our yield. Our raising standards often produce upwards of 65% or higher of the hang weight; actual delivered to your door step. Example: 195 lb hanging quarter, yields in 130 ish lbs delivered. $ 3.75 x195 lb quarter = $731
That's what you pay without ever leaving your home, but you were in charge of the process of what you wanted relative to what a quarter will yield.
$731 divided by 130 lbs delivered, one pays only $5.60 lb roughly for all cuts ranging from filet to burger!! We philosophically like to hang all our beef 14-21 days with 21 being more in line. Enzyme breakdowns occur at different intervals that only enhance the flavor and marble product. Of course, above is average, give or take weights. For a half side, just double all aforementioned amounts across the board. All grass fed and we supplement with all natural fermented forage to keep up Optimal weights. Pig: most halves are in 100 lb dressed weight. We charge , like above, all inclusive at $2.99 lb dressed weight. So for around $300, you get a yield of around 75 lbs of pork that includes everything from bacon, smoked products, sausages of different kinds to all cuts in between. You again choose how want!!
