We sell halves, quarters, and wholes as well as offering individual retail cuts. Halves and 1/4s of beef are a cost effective way to get the greatest variety of meat. Halves are approximately 350-400lbs hanging weight and include processing, custom-cutting(to your specs), and labeled vacuum packaging. Regardless if buying whole, half, quarter, or by individual portions, consumers will rest assured that their beef from Black River Livestock Company will be a...."Cut Above the Rest!"

Bulk Custom Orders: BEEF
1/4, Halves, Wholes.

$3.75 per hang weight on custom side bulk orders, all inclusive which means you get the prime grade beef, processing done to your specifications( our partners take pride in working with you to get how you want cut relative to what it can yield), custom vacuum & labeled packaging , and delivery from our processing partners back to the local area. The rubber meats(bad Cattle humor)the road in terms of savings comes in the form of our yield. Our raising standards often produce upwards of 65% or higher of the hang weight; actual delivered to your door step. Example: 195 lb hanging quarter, yields in 130 ish lbs delivered. $ 3.75 x195 lb quarter = $731

That's what you pay without ever leaving your home, but you were in charge of the process of what you wanted relative to what a quarter will yield.

$731 divided by 130 lbs delivered, one pays only $5.60 lb roughly for all cuts ranging from filet to burger!! We philosophically like to hang all our beef 14-21 days with 21 being more in line. Enzyme breakdowns occur at different intervals that only enhance the flavor and marble product. Of course, above is average, give or take weights. For a half side, just double all aforementioned amounts across the board. All grass fed and we supplement with all natural fermented forage to keep up Optimal weights. Pig: most halves are in 100 lb dressed weight. We charge , like above, all inclusive at $2.99 lb dressed weight. So for around $300, you get a yield of around 75 lbs of pork that includes everything from bacon, smoked products, sausages of different kinds to all cuts in between. You again choose how want!! I'm sure a lot of you have seen this viral post that's been floating around Facebook the last several days. Honestly, every time I see it shared it makes me want to scream! Pigs are omnivores, they have a monogastric digestive track like humans. They do not digest grass and hay the same way ruminants do with their 4 compartment stomach. Pigs need protein and certain vitamins and minerals to survive. The post was comparing two butchered pigs where one was left to forage naturally while the other was supplemented with a corn/soy based hog feed. It was trying to show how that diet made one pig have too much fat. Folks, I'm going to be frank here. This post is completely bogus and is going to lead to a ton of starved, skinny pigs. People are going to think they can get pigs, throw them out on some nice pasture and have a big hog to take to the butcher in 6-9 months. WRONG! You can have the nicest pasture with all the right plants, nuts, etc. but I guarantee it will not be enough nutritionally for your pigs to thrive on alone. Yes pigs do survive in the wild without getting a whole hog ration but they are able to roam and get what they need. They are not confined by fences in a pasture. Even our beloved Kunekune pigs that love to graze need to be supplemented. Ours have a lot of pasture and woods to forage in but I wouldn't think for a second to stop feeding them their pig feed. I would have a bunch of emaciated, sick looking pigs. Not to mention, what if you are raising pigs during winter months where there is no pasture? A pig fed just hay would most definitely starve before spring. So please do not for one second think you are going to get pigs and raise them on pasture alone. You will be very disappointed, as will your meat customers. Grass fed beef is a real thing. Grass fed pork is just bu****it.
