The end of summer in The Valley means the beginning of fall meals and treats. We had 6 volunteer butternut squash and 1 volunteer watermelon growing out in the pasture. We had to pick the watermelon before it was ripe, but that will go to the chickens. We used or gave away all the squash using the last one to make apple butternut squash soup. Our fig bush/tree is looking the best it has and is over 10 feet tall. I made a lovely fig bread with a hazelnut crumpled topping. Toasted with a little butter, Aldi's fig preserves and a sprinkle of homemade granola. Wonderful! This winter, I'll make my own fig preserves and maybe some Muscadine grape jelly from our grapes. Love "living off the land" on our small farmstead and look forward to growing/doing more each year!

A lovely fall dinner in The Valley. Roasted Root vegetables with pork tenderloin and for dessert baked apples with ice cream. Nothing was homegrown but still delicious. Maybe one day! 🍂😋

A gloomy day in The Valley, but it is much needed rain brought in by Isaiais. We deflated the Halloween inflatables, but so far, we haven't had wind. We will keep them down another day. Mom and I had already planned on making cookies today. It was a perfect day to do so. We made Molasses cookies, Mom's favorite. Peanut Butter cookies for Bill. One of his 2 favorites. Me, I'm always about something new, so I made white chocolate chip, pecan maple cookies with maple glaze. They were all wonderful! We followed uo cook8ng making with 3 cheese, ham, and tomato grilled sandwiches along with some Campbell's tomato soup. It was a perfect meal after baking for the day. We will finish the day with a Halloween classic for movie night!I think Bill wants 'Evil Dead'! 🍪🥣🎃

As I mentioned yesterday in memory of Dolly Parton, I'm going to make each months menu from her cookbook. Yesterday, I started with September. I remember when my sister and I got her cookbook. We were amazed at how similar her recipes were to our Mom's. I guess it should be expected. Mom, her parents, and her grandparents were all from Williamson County. Franklin was the city on the mailing address, but they were way out there. Even past Leipers Fork. This was all back before Franklin was the booming "place to be" it is now. There is a road off of Pinewood Road called Walker Hill Road that is named after my Mom's family. On that road in a slight curve and close to the road is a house with the remains of a rock fence that if I'm not mistaken, my great grandparents built. I only remember visiting them there once when I was very young and before they sold it but it is a nice memory. I think Dolly would have liked how her cookbook connects me to my own Tennessee history. It is one of my favorite things about her cookbook. It's like my mom could have written it!
Now I will say that making that meal was an all-day moving and groving, exhausting love affair. Love of my own family. ❤️ Thank you, Dolly. 🦋

Soo...I made my first (I made a Foccacia once) loaf bread. Let me just say Bread making is scary (oh yes it is!)! First off while I read the recipe multiple times. Once I started, chaos ensued. While I made sure I had fresh unexpired yeast, I didn't check my flour supply. I was short a cup of my local Farmhouse flour! Fortunately, I had some King Aurther. My brain is screaming, "Girl... you need to remember to Mise en Place! Why, why, why did you not!" I then add the King Arthur in the mixer bowl and reread the ingredients, and I was supposed to sift! I dumped it all out, and what a mess, but I got it sifted. I get the rest of the ingredients in and let the mixer rip. All the while standing over it and thinking this doesn't look right. The recipe said to add 1T water if the ingredients are dry and not mix in. It did not, however, say what to do if it looked too loose! So I thought well I'll do the opposite." I'll add 1 T flour." That seemed to work. The next thing I did wrong was dumb it onto my floured surface. At this point, once I realized that it needed to go in the bowl with oil. Now I'm in a full-on panic! I collected myself and picked it back up and placed it ever so gently in the bowl. Everything went smoothly after that, and I was just giddy with joy! The end product was fabulous! All in all, it was more forgiving than I expected!
By the way, this is a Dolly Parton recipe. My sister and I got her cookbook when it came out. It's divided by meals for each month. In memory of Dolly Parton, I plan to make each months recipe. The rest of September is to come.
We love and miss you, Dolly. Rest in peace. 🦋

Bill was craving homemade mac & cheese. So, of course, I had to make it for him! This recipe is so creamy and cheesey with a crunchy topping and garden tomatoes. It's just delicious!
Earlier in the week, I needed to use up some jalapenosI and coolapenos (which turned out to be not so cool!), and some fresh corn I'd bought. I made this Mexican corn chicken cassorole. It was wonderful!
Eating good in The Valley! 😋

Well, in pictures, it doesn't seem like a lot, but since June, I've been canning, dehydrating, or freezing. I've done salsa, tomato jam, bread and butter pickles, hot bread and butter pickles, dill pickle spears, whole (not pictured) dill pickles, pickled jalapenos, pickled coolapenos, and blueberry Balsamic jam. All the main ingredients came from our garden. From not wanting to even put put a garden to this. I still have a lot of berries in the freezer that I need to make jam from, but I'll get to that this winter! 🥰

So when you can no longer enjoy the fair due to feeling your age and 101° temperature, you make your favorite treats at home! Mama loves her candy apples and corndogs, Bill loves the Italian sausage with peppers and onions. The peppers in ours came from the garden. Then there is the lemonade which is made from strawberry lemon lemonade concentrate that I canned last year. Of course, you can't forget the roasted corn. Then, for Mom and I, a frozen toasted almond drink. As for me. I love them all! 😋🎡

So, have you heard of the viral box cake mix redo? This is my attempt. You replace the oil with a stick of melted butter, add an extra egg, replace the water with milk them put it in a 9 x 11 baking dish versus a 9 x 13, bake ot at 315° for 36 minutes. Then you heat Hershey's frosting until it is pourable. When I made mine, I was doing it from what I could remember and only used half a stick of butter, used a 9 x 13 baking dish, and baked it at 350° for 23 minutes. I also used the same brand of frosting as the cake mix, which was Betty Crocker. (I found the original video after I made the cake.) It was delicious. The cake was so light and tender, and the frosting cooled to a nice soft fudge like consistency. Give it a try! 😋

So, in addition to canning, I've done some dehydrating and freezing. This is my Thai basil. I've already done the same with my sweet basil. Talk about fragrant! The sweet basil is wonderful, but the Thai Basil is over the top. These frozen cucumbers have soaked in bone broth for 24 hours and will be treats for Enzo. I also made some tomato jam. Wow is that good on a bagel! Finally, I saw this on Instagram. I roasted some jalapenos. Blended them up in the blender with garlic and olive oil until it was a nice sauce consistency. It is so fresh and delicious with chips. I used coolapenos for Mom and I. Love, as my sweet sister Valerie would say, "Living iff the land!" 😋🐙❤️
