The “Butterscotch Dylan” Cookie

Inspired by one of my favorite customers…
When Dylan came to my shop yesterday he said that his mom used to make him butterscotch cookies but now she’s moved out of state…
I’m honored to fill in… 👩🏻‍🍳

This is a salted brown butter cookie with copious amounts of butterscotch, and I also added some Guittard chocolate!!
I only used dark sugars and a touch of molasses to give me that caramelized chewy situation that I wanted, while keeping the edges buttery & crispy…

Topped with Maine flake sea salt…
