Hering's Maple Syrup Hering's Maple Syrup is one of Minnesota's largest producers of 100% pure maple syrup. We are a five generation syruping family, tapping our first tree in 1895.

What started out as a small family tradition, has now turned into a growing business. We are located in southern Minnesota, near Waterville on a small family owned farm. Starting out, we used just one flat pan, than added another and another. For years, we used just three flat pans for our own syrup as well as selling at the farmers market and family friends. In 2010, we purchased our first wood b

urning evaporator, quickly realizing our little hobby was turning into something much bigger than we ever imagined we knew we would have to upgrade. That following year we traded in our wood burning evaporator and purchased a fuel burning evaporator and reverse osmosis. In 2013, we had 13,000 taps out with buckets, and a woods lined with 3,000 taps. As of 2022 we have over 30,000 taps out on lines. We have a H2O brand reverse osmosis which is a 6 cart High Brix system. And a 5 x 16 H2O evaporator. We are a dealer for Dominion and Grimm and H2O equipment.

You know spring is coming when the first boil of the year fills the air with that sweet maple smell! 🍁

We fired up the cooker this past Saturday, March 7th — earlier than usual for us. The trees are running better than they have in years, and we can thank all the moisture we got last summer for that.

Hoping for a great run during the 2026 sugaring season! Fresh syrup will be available soon — we’ll keep you posted as the boils keep rolling.

We finally fired up our cooker this past Friday. Sap has been pretty slow so far this season, as there was quite a bit of frost that still needed to come out of the ground. But with the warm weather last week and today, the frost seems to be moving out quick. If you pulled your taps already, thinking you missed the run, we would recommend putting them back in, we expect our trees to really open up soon. This year will likely be a shorter season with high sugar content. Good luck sugaring and everyone have an extra sweet season!

It’s always syrup season around here! But the real syrup season is upon us! We have been actively getting all of our woods ready to go, and hoping to finish up tapping in the next couple days! The warm weather always likes to sneak up on us, and with not much snow cover, the trees may wake up soon. We will keep you updated when we fire up our RO and cooker. Happy syruping!
