Pastrami day 2. We ended up with almost 18 # of yield from the 9 corned beefs we smoked. Sliced and vac sealed and put in the freezer for meals and sharing. We decided at some point 5 Oz sandwiches we are good size, so everything in 10 Oz packages. Still have a lone pork butt that needs pulling.

While we don't compete any more, once in a while, we flex the muscles. Today we have 9 corned beef briskets to make past...

While we don't compete any more, once in a while, we flex the muscles. Today we have 9 corned beef briskets to make pastrami, one lonely pork butt just because, and a double sized package of sausage ready to go on our barrel and 2 weber bullets, including Tim McCawley 's new baby 14".

So, I corned a brisket and then smoked it to make pastrami. The yield is not very great (we got just over 3 # from an 8 or 9 # brisket) but the pastrami is flat out delicious!! We had giant reubens for dinner. Doesn't get much better than that!

The original BBQ2 beautiful barrel is chugging away at 28 degrees this lovely football playoff Sunday. Tim brined a brisket for 11 days to make corned beef and is now smoking it to turn it in to pastrami. This stuff is insanely good.
