Ryeâz & Shine
After the chill of winter starts to waver we begin to prepare for St. Patrickâs Day. Itâs a symbol of celebration, jubilation, and the rebirth of the warmer days of Ohio. Ryeâz & Shine is a representation of a warmer spring sunshine peeking through the window and waking up nature. This is a combination of two of my favorite Irish whiskey cocktails, The Sour and The Irish Maid. To add a special Irish touch, I made my own Dianthus Tea syrup. Dianthus is a symbol of admiration and native to Ireland.
1.5 oz Powerâs Rye5 oz Aperol25 lemon Juice
1 oz Dianthus Tea syrup
3 dashes of Hummingbird Bitters
Topped with Elder Flower egg white foam.
Dianthus Tea
For this tea I ordered organic Dianthus from a florist and dehydrated it myself on medium temperature in a dehydrator. You can also order Dianthus Tea or dehydrated Dianthus on sites like amazon, just be prepared for long shipping times,
1 cup of water
Ÿ cup honey
1 cup of dehydrated Dianthus blooms
Add your water and honey to a saucepan. Once the liquid is incorporated and boiling, add the dehydrated dianthus to a tea steeper and let steep for 15 minutes. Store in an airtight container.
Elder Flower Egg White Foam Recipe
Add the following ingredients into an ISI and chill down hitting with gas when applied to the cocktail.
4 oz egg white
3 oz elder flower
2 oz lemon juice
2 oz simple syrup
How to build the cocktail
Add Powerâs Rye Irish Whiskey, Aperol, Dianthus Tea Syrup, Hummingbird Bitters, and lemon juice to a shaker and shake until incorporated. Pour over a large cube and top with the elder flower egg white foam. Add fresh Dianthus for garnish.
