Perhaps the most frequent mistake I see when people are cooking brisket: Failing to rest the brisket adequately!

When a brisket comes off the smoker, the meat fibers are extremely hot and the juices are moving rapidly inside the meat. If you slice it immediately, those juices will run out onto the cutting board instead of staying in the brisket.

During the rest:

* The temperature gradually equalizes throughout the brisket.
* The muscle fibers relax.
* The rendered fat continues to distribute through the meat.
* The juices are reabsorbed and retained within the brisket.

The result is a brisket that is:

* More moist
* More tender
* Easier to slice
* Better flavored because the moisture stays

Try resting in a cooler, wrapped in a towel, or in the oven (at 150F) for as many hours as possible. It’s not out of the question to rest a brisket for 8-hours, if time permits.
