What to do when you're craving an afternoon snack? Pull some items from your and your own garden. Baby caprese salads with blackberry vinegar, fresh heirloom tomatoes and and their snack pack mozzarella. Delish!

Come get your veggies! I had some veggies that I wanted to make into an easy summer salad. This has 1 cup cooked white quinoa, 1 cup of sliced cherry tomatoes, a can of rinsed chick peas, cooked zucchini (fresh from my friend's garden!), 1/2 chopped red onion, mixed together with some olive oil, salt and pepper. Can't wait to have this for lunch!

Easy sausage, egg and cheese muffins.
1. Preheat oven to 400 degrees F.
2. Blrown some ground sausage. I used 1/2 pounds. (Mine was local from in Monroe, NC.)
3. Line a muffin tin with baking cups.
4. Beat 10 eggs with 1/2 cup cream or milk. (Mine was unsweetened almond.) Add 1/2 tsp. of salt and pepper.
5. Add cooked sausage to the bottom of each baking cup.
6. Sprinkle some cheese on top. (I used vegan creamy original from and their Chao Creamery line.)
7. Fill your cups with the egg mixture. You can go to the top.
8. Bake for about 20 minutes or until set.
