Another dish celebrating women in agriculture and farming for this week’s , spotlighting a constant partner of ours: Olive Farms, co-founded by Linda Trainum (and her husband Clay) in 2005. Autumn Olive’s goal is “to raise and provide the finest quality pork and beef by any definition and to achieve that goal in balance with the ecology we interact with.” Autumn Olive’s product is something our guests continuously see on the Shilling menu prepared in many different ways. Experience Autumn Olive in this first course dish (our Charred Jimmy Nardello Peppers) boasting a crispy pork rib.
