🥘COMMUNITY SPOTLIGHT: Smokey Shadows Lodge & Restaurant

Have you ever been somewhere close to home and thought, “Why haven’t we done this sooner?” That’s exactly how we felt about Smokey Shadows Lodge in Maggie Valley!

We were so excited to share this experience with my parents, our daughter, and our son-in-law.

The dinner was an excellent home cooked meal (tomato pie was amazing), the service was fantastic and we couldn’t have asked for a prettier setting. An old rustic lodge, beautiful Mountain View’s and so much character.

With family-style dinners, a cozy dining room and a long covered porch overlooking the mountains, this place has that old-fashioned mountain charm that makes our area so special.

If you haven’t been to Smokey Shadows Lodge for dinner, you MUST. Take someone you love, enjoy the setting, and make an evening of it!

What’s Cooking At Christopher’s? Mediterranean Baked Flounder With Garlic And Parmesan. This was so delicious and so easy!! Absolutely loved the lemon garlic sauce that it baked in. Zucchini and onion was tender but still had a little snap. You could easily sub any mild flaky white fish.

One baking dish and was ready in less than 30 minutes with almost no clean up.

1 1/4 pounds flounder fillets, sole fillet will also work
▢ 2 medium zucchini, halved and cut into ½-inch slices (half moons)
▢ 1 small red onion, halved and cut into ½-inch slices (half moons)
▢ kosher salt
▢ black pepper
▢ 3 garlic cloves, minced
▢ 2 teaspoons dried oregano
▢ 1/2 teaspoon sweet paprika
▢ 1/2 teaspoon cumin
▢ Juice of 2 lemons, plus more lemon wedges for serving
▢ 1/4 cup to 1/3 cup extra virgin olive oil
▢ 1/2 cup grated Parmesan cheese
