We pretty much cleaned out the cellar for our 10th anniversary party, but I keep finding stragglers like this oldie.

This is from our first box set release for the Tardis Society (RIP?). Back in the early 1800s brewers would make two versions of the same beer: one to head out to the pubs fresh, known as “running” beers and one that was going to head to oak barrels for a few months or years. These versions were called “keeping” beers and were the exact same as the running beers except double the hops. These extra hops would protect the beer as it aged against souring but would also mellow as the beer aged.

So…this a recreation of a Truman Brewing Keeping Porter (circa 1840). Aged for at least 6-7 years at this point. There was Brettanomyces involved.

Tasting and judgement: Always happy for the carb to be on point with these old Brett beers, they can get lively. Aroma is exactly what you want, leather and dark fruit with a bit of funk. Flavor is dry cocoa, licorice and black leather jacket with a long bitter finish. It reminds me of these German licorice candies called Katzen Kinders.

Overall pretty pretty pretty good! Holding up well with little oxidation. Thanks as always to beer historian Ron Pattinson for the recipe 🍺🤘

New bottle release: Tokyo Style Gose (for Ishiro Honda) 4.6% ABV.

Brewed with local Riverbend pils and wheat malt, locally made made white miso and pickled ginger. Mixed fermentation in stainless gives a bright, clean lemony tartness. The miso gives a hint of salinity and umami and the pickled ginger ties it all together.

Our label designer Fian Arroyo knocked it out of the park with this one. The perfect hot weather summer slammer! Bottle conditioned 500 ml bottles $9. Available at the brewery and local bottle shops now.

All the Zeb fam knows Wally ❤️. She has been the brewery doggo since she was a tiny puppo. She hasn’t been at the brewery for the last couple months because she’s slowly lost use of her back legs. But she wants everyone to know she still doing good and enjoying her life at home. She’s getting used to her new chariot so she can still get around. We welcome the National Homebrewers Convention to Asheville this weekend! We are opening up all day on Thursday (1-7) to give attendees a chance to check out Zebulon. We have a bunch of fun beers on tap including the last ever keg of Original IPA (circa 1840), East India Porter (circa 1840) and some rare bottles from the cellar. This is a free event and open to the general public as well. 🍺🍺🍺🤘
