🍓 EASY STRAWBERRY JAM
Ingredients
• 8 cups strawberries, quartered
• 1½–2 cups sugar
• ½ cup lemon juice
• 1 tsp vanilla extract
• 1 box Sure-Jell for Less or No Sugar Needed Recipes (pink box)
Directions
1. Add strawberries to a large pot and heat slowly over medium heat, stirring occasionally.
2. Once the berries are hot and beginning to bubble, stir in the sugar and lemon juice.
3. Cook for about 2 minutes, then stir in the vanilla and Sure-Jell.
4. Continue cooking for another 3–5 minutes, stirring frequently.
5. Mash the strawberries with a potato masher until they’re as chunky or smooth as you like.
6. Ladle hot jam into clean, hot jars, leaving ¼-inch headspace. Wipe the rims clean and add lids and rings.
7. Process jars in a boiling-water bath.
For my area, I process mine for 5 minutes. Canning times can vary depending on your elevation, so be sure to double-check the recommended processing time for your area.
8. Remove jars and let them cool upright and undisturbed for 12–24 hours. Check that each jar has sealed before storing.
🍓 Makes approximately 8 half-pint (8 oz) jars.
Refrigerate any jar that doesn’t seal.
