Bee Bites: A healthy snack that is quick & easy to prepare. You may enjoy them sweet, salty or with a sting! I used about 6 cups of pecans & divided them into approximately 2 cups per version.
Ingredients
Ratio: 1 cup of pecans to 1/3 cup honey
Ratio: ½ tablespoon butter to 1 cup pecans
Sugar: to sprinkle on top if desired (Helps to offset the stickiness but not required)
Salt: to taste if desired
Cayenne Pepper: to taste if Desired
Non-Stick Spray
1. Liberally spray a cookie sheet with non-stick spray
2. Place measured amount of Pecans, Honey & Butter in a large non-stick frying pan (I used a Wok due to the amount of Pecans used & it worked well.)
3. Stirring constantly, on medium to medium-high heat, cook the Pecan/Honey/Butter mixture until the honey caramelizes. This will take between 7-10 minutes or so.
4. Remove from heat & place on the prepared cookie sheet.
5. Sprinkle the nuts with sugar, Salt and Cayenne Pepper as desired.
6. Spread the nuts out on the tray into a thinner layer.
7. Eat as soon as they cool down or let sit for up to 24 hours & place in a zip lock bag or other storage container.
I let my batch cool overnight. The Pecans stuck to the tray. I placed the tray in the oven on warm to slightly warm up the Pecans so I could get them off the tray more easily. I then placed the three different versions (Sweet, Salty & Spicy) into zip lock bags. If the Pecans stick together again, smash the bag with them in it. (An effective way to break up the pecans permanently)
