We are obsessed with the Apple Whoopie Pies! The perfect dessert for any fall event.

🍎 Ingredients:
For the cakes
4 cups apple cider
2 cups all purpose flour
2 tsp baking powder
1/2 tsp baking soda
1 tsp ground nutmeg
1/2 tsp salt
1/2 cup butter, room temperature
3/4 cup packed brown sugar
2 large eggs
1 tsp vanilla extract
1/2 cup applesauce

For the filling
1/2 cup butter, room temperature
1 and 1/2 cups powdered sugar
1 cup Marshmallow Fluff
1/2 tsp vanilla extract
1 Tbsp apple cider
1/2 tsp ground ginger

Baking Instructions:
1. Preheat oven to 350 degrees F.
2. Bring apple cider to boil and reduce mixture to 1/2 cup.
3. Sift together the flour, baking powder, baking soda, nutmeg, cinnamon to taste and salt.
4. Cream the butter and brown sugar.
5. Gradually mix in dry ingredients until combined.
6. Scoop batter into 1/4 cup portions on baling sheet and bake for 12-15 mins
7. Mix filling ingredients together until smooth.
8. When cakes have cooled, spread filling over the flat part of the cake and add other half of cake on top.
9. Sprinkle the tops with brown sugar and cinnamon.
