One year later, the union between a mixed berry melomel and a rye whiskey barrel from has been completed. Bourbon and spice nose, sweet and tart berry up front and a lingering oak finish. Weighing in at 16% abv, this mead is uniquely layered and complex. More akin to a cocktail, it can be served both neat and on ice. Some new creations inspired by this mead will be in the works soon!

Sorry, I just couldn’t help myself here with this one, quarantine has got me a little loopy🤣 😜 🤣 This blend of peach and berry melomels spent some time cuddling with homemade marzipan and my rye whiskey barrel from . Great nose on this light, fruity and playful mead that will leave you feeling truly exotic and special... 🐅 👑 🍷

As we brace for here in SE Wisconsin, it seems like a good opportunity to highlight this freshly bottled gem. This Neapolitan inspired mead is to packed to the brim with depth. A massive strawberry melomel base spent extended aging on cacao nibs and vanilla beans. Orange blossom honey and a touch of lactose was added on the back end to transform this mead into a viscous, delicious milkshake-esque treat.

Avoid the roads this evening if possible and please stay safe. My personal recommendation: stay home and treat yoself to some mead 😉

Sampling and blending a few of the golden sour ales that have been resting on oak and quietly tucked away in the cellar for the past couple years. The 22 and 26 month old sours have very fruity and floral esters with a nice crisp acidity. These two will be blended and bottled up soon. The younger 17 month sour will spend another month or two with massive amounts of strawberries and rhubarb, fresh picked earlier this summer. By not rushing these batches, the brettanomyces have truly worked their magic. Can’t wait to get these bottled up!!!

Been waiting a long time on these two batches and excited to announce they have arrived!

The Labyrinth - The 12% ABV triple berry and tart cherry base mead that mirrors The Maze but instead backsweetened with Vermont maple syrup. Huge berry nose, big and sweet up front with a tart lingering finish.

The Family Reserve: Box Elder - A mead made with local wildflower honey and syrup made from Box Elder trees I tapped in my back yard. After primary it has spent the past year on bourbon soaked oak. Notes of butterscotch, vanilla and a velvety smooth mouthfeel at 16% ABV.

Excited to take our first steps into barrel aging! Big thanks to John at The Barrel Broker for the hookup. This 15 gallon rye barrel from Few Spirits has incredible aromas of spices, vanilla and toffee and will add some next level complexity to a mead very soon!
