Frequently Asked Questions
How is your beef priced?
Our pricing is based on hanging weight, which is the weight after the hide, head, organs, and other inedible portions have been removed.
Our prices include processing costs, which are nearly $1.00 per pound. Many direct-to-consumer beef sellers advertise a price and then add processing separately. We include it in the price to keep things simple.
• Quarter beef: $6.00 per pound hanging weight
• Half beef: $5.50 per pound hanging weight
• Whole beef: $5.00 per pound hanging weight
How much does a quarter beef cost?
A quarter typically has a hanging weight of approximately 220 pounds, plus or minus 20 pounds.
At $6.00 per pound, the average total cost is approximately $1,200 to $1,400, including processing.
Based on our calculations, the finished packaged beef generally averages around $9.00 per pound when steaks, roasts, burger, and other cuts are combined.
What have your recent cattle weighed?
The hanging weights of our four most recently processed cattle were:
• 464 and 476 pounds
• 476 and 484 pounds
• 464 and 468 pounds
• 392 and 396 pounds
Each animal is divided into two halves. A quarter is generally one-half of one of these listed weights.
When will my beef be ready?
We typically send cattle for processing monthly.
Our next scheduled processing date is August 10, and the beef should be ready approximately three weeks later.
We maintain a waiting list and contact customers as processing and pickup dates are confirmed.
Where do I pick up my beef?
We offer two pickup options:
1. We can pick up the finished beef from the processor and transport it to Griffin Beverage Company in West Branch, where customers can pick it up.
2. Once the invoice is paid, customers may arrange to pick up their order directly from the processor.
Can I choose how the beef is cut?
Yes. Whole, half, and quarter beef orders can be custom cut according to the customer’s preferences.
The processor will work with you on choices such as:
• Steak thickness
• Package sizes
• Roast sizes
• Ground beef package size
• Bone-in or boneless cuts
• Other available processing options
Can I try your beef before purchasing a quarter?
Yes. We occasionally have individual cuts available, depending on inventory.

• Ground beef: $7.00 per pound
• Sirloin steak: $9.00 per pound
• Ribeye steak: $16.00 per pound

Do you have a storefront?
No. We do not currently have a retail storefront or meat market.
Orders are arranged in advance and prepared for pickup at Griffin Beverage Company in West Branch.
Are you opening a meat market?
No. We are not opening a meat market and do not currently intend to do so.
Our family has raised beef cattle since the 1960s. During the past several years, we have moved toward selling directly to consumers rather than sending all of our finished cattle to the traditional livestock market.
Our signage and advertising are intended to introduce more people to the opportunity to purchase local beef directly from a local farm.
