Summer is in full swing in the Ocean State and we thought it was the perfect time to share our collection of mushroom 'seafood' inspired recipes. Everyone coast to coast loves a good lobster roll, fresh oysters, fried calamari, crab cakes and seared scallops. All of these classic summer recipes have a vegetarian, or vegan, spin. We promise you won't miss the meat in these yummy meatless alternatives. Don't forget the lemon!
