Our importer selects the beans they will purchase at the source and cup it before it ever leaves the country. In an effort to ensure that imports of small lot coffees meet quality and flavor expectations, they cup it frequently through the course of the crop cycle. This attention to detail separates us from other online coffee roasters. Our coffee importers purchase mountain grown 100% Arabica coffee beans that thrive in growing altitudes between 4000 and 9000 feet. These higher altitudes have cooler climates and produce a larger, sweeter and denser coffee bean with significantly less caffeine than the inferior and often bitter tasting Robusta Bean (think popular chain coffee shops). Why Small Batch Fluid Bed Roasting? Small batch coffee roasting means a little more work on our behalf but it also means that our specialty grade coffee beans are given more attention during the roast. Small batch roasting gives a more consistent roast throughout the batch and offers superior quality control. Coffee fresh out of the roaster does not have much of an aroma, but give it a few hours to begin the degassing process and you will understand why there is nothing comparable to fresh roasted coffee. Companies that proclaim “slow roasted” or “packaged while still hot” do not fully understand the delicate nature of coffee. Coffee should be allowed to cool and degas for at least a few hours prior to packaging in one-way degassing valve bags. Degassing is the roasted beans releasing of CO2. This is the same CO2 that keeps the beans delicate nature from being oxidized and going stale as it is exposed to oxygen. Though we prefer to only sell whole bean coffee, we know that not everyone has a grinder, we have a precision Swiss made grinder that can grind as fine as Turkish coffee to a coarse French press grind. Our importers get coffees from 20 countries globally, Free Trade, Organic, Auction and Special Lot offerings. Most of our single origin coffees can be purchased year after year, but each growing season will bring with it a new crop. Even beans from the same plantation or farm may have subtle changes from the previous year. Some specialty grade coffees are rare and available in only limited quantities. We will always offer our fresh roasted coffees at a competitive price. I was asked if we will offer Jamaican Blue Mountain or Kona coffee. The answer is maybe but only as a special if we did. Please understand that because of the nature of a coffee plant, most mature coffea arabica produce only about 5-11 pounds of coffee per plant per year. This, plus a smaller growing area (ie: Jamaica or Hawaii) create a supply and demand. I am not saying that Jamaican or Kona coffees are not good. They are delicious, however, expensive because of low quantity/high demand. Our fresh roasted specialty coffees are available online while supplies last, so please check back often. We will also add new coffee bean products as they become available. My personal favorite is from the Guatemala, Antigua Lake region, my Daughter's is Nicaragua Cafe` Diego. We believe the altitude and volcanized soil give this quintessential flavor and body when roasted properly. However we will let you decide what is the best. Because we will offer coffees from virtually every growing region throughout the world, you can visit every exotic location through our coffees (Africa, Asia/India and the Americas [Central America and South America]).
