Busy nights call for quick & healthy meals! 🙌 When I don’t have a lot of time, I toss my meat into the Instant Pot for about 45 minutes, then add the rest of the ingredients—BOOM—dinner is ready in just over an hour! 🍲🔥

Ingredients:
✔️ 2-3 lb chuck roast or stew meat
✔️ 2 qt jars or 1 1/2 (46 oz) cans of tomato juice
✔️ 1 qt bag frozen corn or 1 (15 oz) can of corn
✔️ 1 qt or 2 (15 oz) cans of green beans
✔️ 4-5 potatoes, diced
✔️ 1 large onion, diced
✔️ 6 stalks celery, diced
✔️ 4 carrots, shredded
✔️ Beef tallow or olive oil
✔️ Salt, ground pepper, granulated garlic & granulated onion to taste
Directions:
1️⃣ Add chuck roast or stew meat to the Instant Pot with a little beef tallow or oil. Sauté for a few minutes, then pressure cook on high for 45 minutes with 2 cups of water or beef broth. Let natural release for 10 minutes, then quick release. Shred the meat.
2️⃣ Add diced potatoes, onions, celery, shredded carrots, tomato juice, corn, green beans, and seasonings. Stir everything together.
3️⃣ Seal the Instant Pot and pressure cook on high for 20 minutes. Quick release when done.
4️⃣ Stir, taste, and adjust seasonings as needed.
