Nana’s 3-Ingredient Pecan Log

Ingredients:

1 (11-ounce) box vanilla wafers
1 (14-ounce) can sweetened condensed milk
3 1/2 cups finely chopped pecans
Instructions:

Crush the vanilla wafers: Use a food processor to finely crush the vanilla wafers.
Combine ingredients: In a large bowl, mix the crushed wafers, sweetened condensed milk, and chopped pecans until well combined. This mixture will be thick and may require using your hands to fully incorporate.
Form the logs: Divide the mixture in half and shape each portion into a log. Place each log on a large sheet of wax paper and wrap tightly.
Chill: Refrigerate the wrapped logs for at least 2 hours to firm up.
Serve: Once chilled, slice the logs into 1/4-inch slices and serve.
Tips:

For enhanced flavor, toast the pecans in a 350°F oven for 8 to 10 minutes before chopping and adding to the mixture.

Alabama Pecanbread

Ingredients:
2 cups pecans, finely chopped
1 1/2 cups self-rising flour
1 cup granulated sugar
1 cup brown sugar, packed
1 cup vegetable oil
4 large eggs, beaten
1 teaspoon vanilla extract
1/4 teaspoon salt

Directions:
Prepare the Oven and Baking Dish:
Preheat your oven to 350°F (175°C).
Lightly grease a 9x13-inch baking dish with butter or non-stick spray.

Mix the Wet Ingredients:
In a large bowl, use a wooden spoon to stir together the granulated sugar, brown sugar, beaten eggs, and vegetable oil until fully combined.

Incorporate the Dry Ingredients:
Stir in the self-rising flour and salt until the mixture is well incorporated.
Mix in the vanilla extract, then fold in the finely chopped pecans.

Bake the Pecanbread:
Pour the batter into the greased baking dish, spreading it evenly.
Place the dish in the preheated oven and bake for 30-35 minutes, or until a toothpick inserted into the center comes out mostly clean.

Praline Crunch 😋

This deliciously sweet and crunchy snack is perfect for gatherings or just treating yourself!

Ingredients
8 cups Crispix cereal 🥣
2 cups pecan halves (salted) 🥜
½ cup packed brown sugar 🍬
½ cup corn syrup 🍯
½ cup butter 🧈
1 tsp vanilla extract 🍦
½ tsp baking soda 🧪
Instructions
Prepare the Oven:

Preheat your oven to 250°F (120°C).
Mix Cereal and Pecans:

In a large mixing bowl, combine the Crispix cereal and pecan halves.
Make the Praline Coating:

In a large saucepan over medium-high heat, add the brown sugar, corn syrup, and butter. Stir occasionally and bring the mixture to a boil.
Once boiling, remove from heat, then add the vanilla extract and baking soda. Stir well until the mixture is smooth and foamy.
Coat the Cereal:

Pour the praline mixture over the cereal and pecans, stirring to coat everything evenly.
Bake:

Spread the coated mixture into a 9x13-inch baking pan. Bake for 1 hour, stirring every 20 minutes to ensure even coating.
Cool and Serve:

Once done, spread the mixture on wax or parchment paper to cool completely. Break into pieces and enjoy!

Apple Cinnamon Pecan Bread

Ingredients:

1 3/4 cups all-purpose flour
2 1/2 teaspoons cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
1 teaspoon baking powder
2 large eggs (room temperature)
3/4 cup sugar
1/3 cup vegetable oil
2 tablespoons applesauce
1 teaspoon vanilla extract
2 cups finely chopped peeled apples
1 cup chopped toasted pecans
1 tablespoon sugar (for sprinkling the top)
1/4 teaspoon ground cinnamon

Directions:

Preheat your oven to 350°F (175°C). Grease a loaf pan.
In a medium bowl, whisk together the flour, cinnamon, nutmeg, salt, and baking powder.
In a large bowl, beat the eggs, sugar, vegetable oil, applesauce, and vanilla extract until smooth.
Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Gently fold in the chopped apples and half of the pecans.
In a small bowl, combine the remaining pecans, 1 tablespoon of sugar, and 1/4 teaspoon of ground cinnamon. Sprinkle this mixture over the top of the batter in the loaf pan.

Brownie Pecan Pie Ooey Gooey Butter Cake 🍫🥧🧈

Ingredients:

For the Brownie Layer:
- 1 box brownie mix (plus ingredients listed on the box)
- 1 cup chopped pecans

For the Pecan Pie Layer:
- 1 cup light corn syrup
- 1 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups chopped pecans

For the Ooey Gooey Butter Cake Layer:
- 1 package (8 ounces) cream cheese, softened
- 1/2 cup unsalted butter, melted
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 box yellow cake mix
- 4 cups powdered sugar

Directions:

1. Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish.

For the Brownie Layer:
2. Prepare the brownie mix according to the package instructions, then fold in the chopped pecans.

3. Spread the brownie batter evenly into the prepared baking dish. Bake for 15 minutes, then remove from the oven and set aside.

For the Pecan Pie Layer:
