Two chances to visit the farm this September!

Join us for a Thursday on the Farm on September 10 or September 17.

Spend the afternoon at Hidden Springs, enjoy a guided tasting of our sheep milk cheeses, meet the flock, experience the Running of the Ewes, and get a closer look at life here on the farm.

These molds are clean, empty, and patiently waiting for their next batch.

But around here, empty molds don't stay empty for long.

Fresh curds are coming, the creamery is about to get busy, and before we know it, these will be holding the beginnings of another batch of Hidden Springs cheese.

Back to school means back to quick and easy!

These Turkey, Bacon & Driftless Roll-Ups are an easy lunchbox addition or after-school snack that takes just minutes to put together.

Mix together:

Garlic & Herb Driftless
Finely chopped turkey
Bacon bits
Diced cucumber
Diced sweet peppers
Chopped spinach

Spread the mixture onto a tortilla, roll it up tight, and slice into bite-sized pinwheels.

Creamy, crunchy, cheesy, and easy to make ahead for those busy school days.

Try it different ways with other Driftless flavors and other items you love.

Radish Farm Stop is officially open, and we’re so excited to be a part of it!

We recently had the opportunity to visit, see our cheeses on the shelves, and take in all the incredible local products surrounding them. There’s something pretty special about seeing so many farmers and makers represented together in one place.

We also wanted to share a little of what Radish Farm Stop is all about because their mission is one that feels very close to our hearts:

Sometimes all you need is pasta, pepper, and really good cheese.

We're putting Emmy Lou front and center in our take on Cacio e Pepe. Finely grated Emmy Lou, freshly cracked black pepper, and starchy pasta water come together to create a silky, cheesy sauce with surprisingly few ingredients.

Simple. Comforting. And a very good excuse to grate just a little more Emmy Lou over the top.

What does a day at Hidden Springs Creamery actually look like?

The answer changes almost every day.

One minute we're caring for the flock and working in the pasture. The next we're in the creamery making sheep milk cheese, filling orders, preparing for markets, or tackling one of the countless jobs that come with owning a farm and small business.

Farming, cheesemaking, and ownership all happen side by side here. Some days are long, some are messy, and very few go exactly according to plan, but it's all part of building something we're proud of.

Let’s talk marinades.

One of the easiest ways to give your favorite cheese a whole new spin is with a simple marinade. Fresh herbs, olive oil, garlic, bruschetta-inspired flavors, a little heat... there are so many ways to make it your own.

Not sure where to start? Try our Farmstead Feta first. Its creamy, tangy flavor makes the perfect base for experimenting with whatever you already have in the kitchen.

Creamy, fresh, and made for summer.

Our Coulee Ricotta gets whipped until smooth and creamy, spread generously over crisp toast, and topped with slices of fresh strawberries for a simple bite that lets every ingredient shine.

The richness of sheep milk ricotta paired with sweet summer berries makes this an easy breakfast, afternoon snack, brunch addition, or light dessert.

Sometimes you don't need a complicated recipe. Just really good cheese, fresh seasonal ingredients, and a piece of toast.
