Low carb beef lasagna


Make 4 servings
6 Egg Life Italian wraps (GAMECHANGERS)
1/2 pound ground beef
1 cup mozzarella
1 cup ricotta cheese
1 tbsp oregano
1 tbsp of garlic powder
salt and pepper to taste
jar of your favorite no sugar added pasta sauce (i use Rao)

Preheat oven to 400 degrees
cook ground beef until brown. drain
add seasoning and 1/3 of the jar sauce sauté for 5 more minutes
I mix the ricotta and meat together (but use the lasagna technique you choose)
ladle a little sauce in the bottom of the dish
put your first layer of wraps (I cut them in half to fit in the rectangle pan using 2 per layer). mine is a small pan. Do what works for you.
ladle 1/3 of the beef ricotta mix, a layer of cheese and a little sauce
2 more layers and then the final layer is wraps. Top it with the remaining sauce and mozzarella cheese.

bake at 400 degrees for 30 minutes

Low carb beef enchiladas

Make 4 enchiladas

4 Egg Life Southwest wraps (GAMECHANGERS)
1/2 pound ground beef
1 cup shredded Cheddar
Taco seasoning (no sugar)(If you can’t find add cumin, chili powder salt and pepper)
jar of your favorite salsa
Hot sauce to taste

Preheat oven to 400 degrees
cook ground beef until brown. drain
add seasoning and hot sauce
put a few tablespoons of the salsa on the bottom of the casserole dish
fill each egg wrap will 1/4 of the beef and cheese roll and place in the dish
cover enchiladas with the rest of the salsa and the rest of the cheese

bake at 400 degrees for 30 minutes

Garlic Roasted Broccoli

4 cups fresh broccoli cut into bit size pieces
2 tbsp avocado oil (substitute whatever oil you like) I use the spray (use less oil but coats)
4 cloves of garlic chopped
1/2 tsp salt
1 tsp pepper

Mix all ingredients to coat
Spread in one layer in a baking sheet
Bake at 400 degrees for 20 minutes
Serve hot

Roasted Cumin Carrot Slicks

5 large carrots cut in sticks like French fries
1 1/2 tbsp. Avocado oil (substitute whatever oil you like) I use the spray (use less oil but coats)

Chicken and White Bean Soup
1 lb dry white beans (soaked in hot water for 1 hour and rinsed)
3 boneless skinless chicken breasts
6 cloves of garlic
1 medium onion chopped
3 large carrots chopped
3 stalks of celery chopped
Tsp thyme
Tsp salt
Tbsp pepper
1 packet onions soup mix
8 cups chicken or veggie broth

Crockpot - Add all ingredients to a crockpot and cook on low for 8 hours. Then pull chicken and stir. Add additional stock or water if needed.

Instant Pot - Add all ingredients to a instant pot and cook on Bean setting for 35 minutes and allow to slow release . Then pull chicken and stir. Add additional stock or water if needed.

Tuscan Shrimp and Quinoa Soup

1 tsp oil
3 large carrots chopped
1 onion chopped
1 red or yellow pepper (your choice) chopped
2 stalks of celery chopped
6 cloves garlic chopped
8 cups veggie of chicken broth
1 tbsp. salt
1 1/2 tbsp. pepper
tsp red pepper flakes
tbsp. oregano
1 can pizza sauce or 1 1/2 cup of your favorite tomato sauce
2 tbsp. tomato paste
1 1/2 uncooked quinoa (make sure to rinse it or stomach discomfort may occur!!!)
2 cups fresh chopped spinach
2 Pounds Shrimp
Parmesan Cheese to garnish

Instant Pot
Turn on instant pot to simmer/sauté mode
Add oil, carrots, onion, peppers, celery and garlic to instant pot
Sauté veggies until tender
Add veggie broth, salt, pepper, red pepper flakes, oregano, tomato sauce, tomato paste and quinoa
Stir
Seal instant pot lid, turn to soup mode for 20 minutes and let slow release
Add additional broth if too thick
Add Spinach and shrimp and stir until shrimp is cooked through

Serve with a sprinkle of parmesan cheese

If you don't have an instant pot follow the instructions above but use a soup pot over medium heat. to sauté the veggies.
Once you add the add veggie broth, salt, pepper, red pepper flakes, oregano, tomato sauce, tomato paste and quinoa Simmer for 30 minutes then add additional broth if too thick then spinach and shrimp. Stir until shrimp is cooked through.

Serve with a sprinkle of parmesan cheese

New Recipe! This is so delicious. I won a chili cook-off with this one! You may eliminate the cream if you must.

Chicken Chili
3 - 4 lbs. of boneless skinless breasts
3 cups chicken stock (add more if it gets too thick)
one jar salsa Verde
2 packets McCormick white chicken chili seasoning
2 -3 cans of white cannelloni beans with liquid
tbsp. black pepper
tsp cumin
tbsp. garlic powder
One cup heavy cream

Added chicken, salsa Verde and chicken broth to crock pot
Cook on high for 4 hours or low for 8 hours
Shred chicken
added remaining ingredients and stir
Cook on high in crock pot for one hour and switch to warm until ready to serve
