So, as a market gardener, I spend a lot of time prepping, planting, weeding, growing vegetables, fruit and then tending to livestock!
But there’s a side of ‘business’ that is just as important, ‘marketing’ and with social media, there’s a whole world out there that is a vital part of the process!
So if I can ask for your help, if you have purchased from us, ate some of our products, or been to the farm, tell others about your experiences by giving us a good review on Yelp Biz…. (Something I just learned about last night) it’ll help folks who haven’t discovered us, hear from you!

Eggplant Parmigiana

So one of the ways we’ve kept tomatoes during the ‘off season’ is to freeze em. I froze them whole, right off the vine into a bag, into the freezer, BUT next time I’ll ‘core them’ ……
So during the off season, we’ve pulled tomatoes out of the freezer, put in a pan w lid, then pulled off the skin to make our own sauce. THe taste is there!
No hassle canning, pull exactly what you need for the number of folks ur feeding! Quite a few wins!
I also browned some onions and garlic prior to sweating these tomatoes!
Meanwhile I thinly sliced eggplant, (you can peel we didn’t) put on cookie sheet, salted them, wait a few minutes use paper towel to remove excess moisture. Repeated that step, then wiped off salt. Added bread crumbs, ‘broiled’ them - keep an eye on em not to burn em!
Oh I did render down the sauce, cause both tomatoes n eggplant have a lot of moisture!

( Pro Tip - Also u can add tomato paste to thicken up the sauce)

Then layered… sauce, eggplant, mozzarella (shredded), add basil (u can use ‘ricotta’ also)
Then baked 350 till bubbles… melting the cheese….

I added garlic salt & oregano …..
Experiment with this to you dial in what you like!

Here’s something to really think about!

So this is an interesting issue!
We did the Farm Crawl in Main, over a week ago! We brought home a small vase of cut ‘basil’ and here’s a video of how well it did sitting outside on porch!
Then on top of all that, it’s been high 90’s this week, the feel like temp into the 100’s! And the basil still looks great! Now Kathy did change the water once!

I forgot to post this earlier, I hope you’re getting ready for the last of the summer and the beginning of winter seed starting! By September you oughta have your winter crops planted and growing well! This is the time to get prepared! Remember we grow more in the winter than in the summer!
I also planted 3 - 128’s of brussel sprouts, broccoli and broccolini! And another 128 of Muir! (The last of the summer lettuce) we’ve already got our winter lettuce plants and carrots growing!
