Itโs Saturday, the house needs cleaning, and Mr. La Despensa is off helping a neighbor build a fence. Lunch needed to be easy. ๐ซ
So I raided the fridge, freezer, and pantry:
๐ฟ 6โ8 thin-sliced frozen chicken breasts
๐ฟ About ยพ of a container of 2-day-old pico de gallo
๐ฟ ยฝ cup La Despensa organic tortilla-style Spanish soup mix
๐ฟ ยฝ jar of leftover salsa
๐ฟ A little chicken bouillon, smoked salt, pepper, cumin, and True Lime powder
Everything went straight into the pressure cooker with one cup of hot water, frozen chicken and all. High pressure for 40 minutes, natural release. In about an hour, weโll have a hearty, easy lunch with almost zero effort. Served with shredded sharp cheddar cheese and sour cream. I wish I had some fresh cilantro, but you know what they say about wishing in one hand... ๐
Nothing fancy. No special grocery trip. Just using what we already had and letting a few good pantry staples do the heavy lifting.
Thatโs what we love about a well-stocked pantry. It doesnโt have to be complicated. ๐งบ
