Brisket is a cut of meat from the lower chest of beef. Cattle do not have collar bones, so the pectoral muscles in the brisket support about 60% of the body weight of the animal. This requires a great deal of connective tissue so the meat must be cooked correctly to tenderize it. Recommended methods are baking in the oven, cooking low and slow on the stove top, simmering in a slow cooker with vegetables, and grilling over soaked wood chips.
