I like to start every morning out with maple-walnut-cranberry oatmeal. Step one throw out your instant oatmeal and buy old fashioned oats. Find a microwavable bowl with tall sides. Add one-half cup of oats to the bowl followed by 1 cup of water. Microwave on high for 2 minutes and 15 seconds. Add generous amount of walnut pieces then and only then drizzle with maple syrup. This order assures the maple syrup gets into the cracks and crevices of the walnuts! Add dried cranberries and a splash of 2% milk to cool.

MAPLE GLAZED APPLE CIDER BUSHMILLS BIRD

Ingredients:
*1/2 cup pure maple syrup, 1-1/2 sticks (6 ounces) butter, l stick cut into chunks and
Softened, 1/2 stick softened, 2 tablespoons chopped fresh thyme and (optional) a few sprigs.
*1 14-pound turkey
*Salt and pepper
*2 onions, chopped
*2 tibs celery, chopped *2-1/2 cups apple cider but a couple splashes or ounces of
Bushmills Honey Irish Whiskey *1 14-1/2 ounce can chicken broth
*1/4 cup flour

Directions 1. In a small saucepan, bring the maple syrup to a boil. Lower the heat and simmer
until reduced by half, about 3 minutes. Pour into a bowl, then stir in 1 stick butter and the
chopped thyme. Freeze for 30 minutes. 2. Position a rack in the lower third of the oven;
preheat to 400 degrees. Place the turkey, giblets and neck on a rack in a large, heavy roasting
pan. Season with salt and pepper. Using your fingers, gentle loosen the skin from the breast
and spread about half of the maple butter over the breast meat under the skin. Rub the
remaining maple butter on the outside. 3. In a large bowl, combine the onions, celery,
thyme springs and salt

CUMIN-ROASTED CARROTS WITH WHITE WINE GLAZE

Use slender carrots for this easy side dish that showcases the roots’ inherent sweetness.
The carrots should be no thicker than 2 inches in circumference at their thickest point.
If yours are chunkier, simply cut them in half lengthwise. For a striking presentation, choose
a mixture of orange, white and purple carrots.

1 lb slim carrots with tops
1 tsp cumin seeds
1/4 cup fruity white wine, such as Open Riesling-
2 tbsp olive oil
1 tbsp liquid honey
Pinch of hot pepper flakes
Kosher salt and freshly ground black pepper to taste
1 fresh bay leaf
Finely chopped cilantro for garnish

Preheat oven to 400F. Scrub carrots, then trim root ends. Trim tops of carrots to about
1 inch. Set carrots aside.
In a large ovenproof skillet, toast cumin seeds over medium heat until fragrant, 1 to 2 minutes.
Remove skillet from heat.
In a spice grinder or with a mortar and pestle, grind or pound cumin seeds just until coarsely
ground.
In the same skillet, whisk together ¼ cup wine, the oil, honey, cumin, hot pepper flakes and
salt and pepper to taste. Add carrots and bay leaf to skillet and toss well to coat with wine
mixture.
Cover skillet tightly with a lid or foil. Roast in oven until carrots are starting to become tender,
15 minutes.
Remove lid or foil from skillet. Roast carrots in oven, uncovered and tossing once or twice,
until they are just tender, 10 to 15 minutes.
Wearing an oven mitt, remove skillet from oven. Transfer carrots to a serving platter and

Still wearing oven mitt to hold skillet’s handle, add remaining wine to skillet and bring to a
boil over high heat, stirring to scrape up any browned bits from bottom of skillet. Boil, stirring
often, until liquid in skillet has reduced by at least half and is slightly syrupy, about 2 minutes.
Discard bay leaf.
Drizzle reduced cooking juices over carrots. Sprinkle with cilantro and serve warm or at
room temperature.

Serves 4 to 6 as a side dish.

FRIED CHICKEN WITH SRIRACHA MAPLE SYRUP

Hot from the frying pan, if you’ve ever wanted to know the secret to great fried chicken,
It boils down to a few simple ingredients used properly—and a drizzle of Sriracha maple
Syrup on top.

1 cup all-purpose flour
1/4 cup matzoh meal
1 tsp salt
1/4 tsp freshly cracked black pepper
1/2 tsp garlic powder
1/2 tsp cayenne
1 frying chicken, 3 lbs, cut-up or equivalent of chicken parts

Sriracha Maple Syrup
1/2 cup pure maple syrup
3 tbls sriracha sauce
1/2 cup vegetable shortening such as Crisco

Combine flour matzoh meal, salt, pepper, garlic powder and cayenne in large plastic
Bag or paper bag. Add a few pieces of rinsed and slightly damp chicken at a time and
Shake to coat. Let sit on parchment paper for 15 minutes.

Combine maple syrup with sriracha sauce and set aside. (May be warmed just before

Heat shortening to 365 degrees F (medium high heat) in large cast iron skillet. Fry chicken
25 to 35 minutes without lowering heat, turning once or twice for even browning. You may
Have to do this in batches so as not to overcrowd the pan. Internal temperature should be 165
Degrees F. Drain on paper towel. Sprinkle with a pinch more salt if desired. Serve chicken with warm
Sriracha maple syrup.
