Zucchini Bites with Wasabi Seasoning Salt Dip

Spring is a great time for these delicious wasabi zucchini bites with a kick from our Wasabi Seasoning Salt! Simple and delicious as a side dish or appetizer.

Zucchini Bites with Wasabi Seasoning Salt Dip
Recipe

Ingredients:

3 medium zucchini, shredded (about 6 cups)

3 ounces parmesan cheese, grated

1/2 cup almond flour or regular flour

1 large egg

1/4 teaspoon garlic powder

1 teaspoon of Original or Lemon Wasabi Seasoning Salt (more or less to taste)

Salt to taste

1 cup Sour Cream for the Wasabi Seasoning Salt Dip

Directions:

Place the zucchini in a colander and sprinkle with salt. Toss to combine and let sit for 30 minutes. Pour the zucchini onto a clean dishcloth. Fold the dishcloth over the zucchini and gently press to remove any excess moisture.

Preheat the oven to 400ºF. Place the zucchini, salt, parmesan, crushed plantain chips, egg and garlic powder in a medium bowl and stir until combined.

Spoon bite-size portions of the zucchini mixture onto a baking sheet lined with parchment paper. Bake for 10-12 minutes until just brown on the edges.

To make the Wasabi Seasoning Salt Dip combine the 1 cup of Sour Cream with 1-4 tablespoons of either Original or Lemon Wasabi Seasoning Salt.

How much Wasabi Seasoning Salt you will use depends on your taste. Start with 1 or 2 tablespoons and go from there
