Cucumber Wasabi Mint Gazpacho

What is gazpacho? It is a chilled soup made with raw vegetables. Perfect for those hot August days especially when made with cooling, refreshing cucumber paired with spicy wasabi. Easy to make, just blend, chill and serve!

Cucumber Wasabi Mint Gazpacho Recipe

Ingredients:
(Serves 4-6)

6 cups cucumbers, seeded and roughly chopped (4 medium cucumbers)

3/4 cup packed fresh mint leaves

2 Teaspoons of freshly grated wasabi paste

1/2 lemon, juiced

1 garlic clove

2-3 Tablespoons olive oil

1 Teaspoon of Oregon Coast Wasabi Lemon Wasabi Seasoning Salt

Additional salt, to taste

Directions:

In a high-powered blender, add cucumbers, mint, wasabi paste, lemon juice, and garlic cloves and Wasabi Lemon Seasoning Salt. Add about half of the olive oil to start, and once blended determine how much more you want to add. Add the salt to taste.

Blend on high until combined to desired consistency – as smooth or chunky as you like! Add additional olive oil to thin out as needed, and adjust salt to taste.

Chill in fridge for at least 15 minutes; serve chilled with a sprinkle of Oregon Coast Wasabi Lemon Wasabi Seasoning Salt, additional mint, cucumber, and goat cheese garnish as desired

When you are preparing Wasabi Rhizome…

Brush but do not peel

Make sure you use an actual wasabi grater (not a micro plain or cheese grater)

Let your wasabi paste rest for a few minutes after grating for the best flavor

The chemical compound 6-MITC (also known as 6-(Methylsulfinyl)hexyl isothiocyanate) is present in all parts of the wasabi plant – the leaves, the stems, the rhizome, & the roots and it is the bioactive molecule in wasabi responsible for many of it's amazing health properties.
