***** Father's Day Weekend - Butterscotch Pie!! *****
Hello all, we are making our from-scratch Butterscotch Pie next weekend for Father's Day! The method we use to make this pie isn't too far off from how we make our sea salt caramel, so it almost tastes like caramel-butterscotch to me. Our Butterscotch Pie is a far cry from the butterscotch pudding you make from a box! We do have a version where we add Johnnie Walker Scotch, but for this version we skipped the alcohol. We simmer butter and brown sugar to get that deep caramel flavor, thicken it with the traditional egg yolks and cornstarch, and add a bit of vanilla extract. We pour this filling in an Oreo crumb crust top it off with whipped cream, a drizzle of our homemade Sea Salt Caramel, and include a baggie of Maldon sea salt flakes for you to sprinkle on at your discretion.

Howdy everyone!
We're ready to bake another batch of our Sour Cream Raisin Pies this upcoming weekend. Even people like my wife who aren't normally big raisin fans have really liked this pie flavor! It doesn't overwhelm you with a strong raisin flavor, but it has a great mix of textures and a bright tanginess from the sour cream that brings it together. ***** Sour Cream Raisin Pie - Ready Toe Eat - $38 *****
For this old-fashioned classic we make the pastry cream filling using sour cream, milk and a bit of lemon juice to get that bright flavor to come through. We add a bit of freshly grated nutmeg, allspice, and cinnamon for that nostalgic spice profile, then bring raisins to a simmer and let them steep in hot water for an hour to plump them up. We fold them into the pastry cream, spread it inside our all-butter pastry crust, and top it with our Marshmallow Meringue. Call your grandparents on their landline and tell them you're bringing over the pie from their childhood!

I'm harvesting a ton of rhubarb this week from my 10 rhubarb plants, so we'll be having Strawberry Rhubarb Pie this weekend! The sweetness of the strawberries offsets the tartness of the rhubarb and brightens the flavor of this classic pie. After much testing, we found that the best ratio is 60% Rhubarb and 40% Strawberry to preserve the tartness of the rhubarb.

For this pie we make brownie batter using Ghirardelli dark chocolate and pour it into our Oreo crumb crust. Once that bottom brownie layer is baked, we make a rich middle layer with more Ghirardelli dark chocolate, heavy cream, egg yolks, brown sugar, and bit of espresso powder to bring out the chocolate flavor even more. We then top it with whipped cream to cut through the richness a bit, making this a chocolate lover's dream pie!

This weekend we're making Lemon Meringue Pie! It's definitely one of our most-requested pies, so I hope you enjoy our take on this classic flavor. We enjoy a really tart version, so we use as much fresh-squeezed lemon juice as possible without it being overwhelming. You can check out the full description and preorder info below.
