It's tough when you don't meet expectations, and this was one of those years. The first half of the season (thru March 31) was very similar to last year but after an Easter cold spell, the sap never got fully going again. The huge snowfall on March 15 didn't seem to affect the sap run. However, syrup totals were down by nearly 30% over last year's record numbers. I'll be looking to add more taps next year to get syrup numbers higher in an off year. Here's a look at the past 5 years:

The season just got rolling and then … Whamo! This is in addition to 9” of snow last Thursday night, and it’s still snowing (and blowing) today! This is one time first place isn’t where you want to be (but it is kinda cool). Click on the photo below for the complete list.

Truth be told, I’m relaxing in my woodstove-warmed basement in Sussex as I write this. Heading back up Wednesday. Gulp.

Note: We will no longer be selling our syrup at Brewers Two Cafe due to an ownership change. We continue to sell at Mama D’s Coffee and the Sawmill Inn.

It was a great year! So great that I ran out of firewood and bottles and the sap was still running 4 days later when I was blowing out the sap lines. I exceeded last year’s syrup total by 10 gallons, helped by my lowest sap/ syrup ratio ever at 39:1. The syrup was also slightly darker this year. But I’ll be ready for next year! Here's a comparison of the last 5 years:

It’s been an interesting year with multiple power outages (one for 5 days) and a very good sap run.

Another change for this year was to switch from a hand pump filter press to an electric pump filter system, which didn’t help much when the power was out but it’s been a good move now that I’m making 50+ gallons of syrup (and the power is back on). The electric filter system also comes with a heated canner that allows a temperature setting—making finishing syrup faster and easier. Here’s a look at the equipment used to do maple syrups dirtiest job— filtering.

I put in about 200 taps the first week in March—about 75% on sap lines. The sap run really picked up later last week but the frost is still deep after a winter with little snow and lots of subzero temperatures.

I made two changes in the sugar shack for this season. I lined the entire evaporator with ceramic blanket insulation and then lined the firebox with firebrick, both to keep the heat in and use less wood. This is how the commercial evaporators are designed. It seems to be working.

I also moved the totes and Reverse Osmosis inside to reduce problems with freezing. RO draws the raw sap from the bottom tote and pumps the concentrated sap (50% less water) into the top tote, which then flows into the warmer pan. That’s working too. Imagine that!

Despite the warm winter and spring, we had a very successful syrup season. Our 2/20 first tap date turned out just fine--the first time we ever tapped in February. We bottled 18 batches of syrup in the first 4 weeks at a ratio of 42.4:1 (2100 gallons sap, 49.5 gallons syrup). After 2 weeks of cold weather, we did collect another 505 gallons sap but the sap was less sweet, resulting in only 8.813 gallons syrup (57.3:1), so that raised our ratio a bit. Here's a comparison of the last 4 years:

We've had 4 solid weeks of sap run with 2100 gallons of sap processed as of 3/19. Things have slowed with the cold, snow and rain so I took a week off.

Here is a pano of Lot 22 showing the sap lines which go back into the woods. All 50+ taps in this picture run into the 2 white barrels. Since this picture was taken last week there has been 10" of wet snow followed by rain.

Quick update: Nearly 200 taps are in as of February 21 with over 1000 gallons of sap processed as of yesterday. The weather continues to be warm but we have many freezing nights, and some frost is still in the ground. Both are good signs for a longer season.
